Yes, they pick their occupation when they do their visa to come work here. They don't happen to know any skills, no education and they want to work. Their country and no other country will give them what we give. So I believe that some people do choose to be servants.

These people have less options in life than you do, mostly because they are poorer than you and have to move to Saudi to work. They, thus, have less recourse to civil and human rights.
