I threw together some soup yesterday and it is incredible! So easy.
Just roast chunks of butternut squash, delicata squash and one big carrot (400 for about 25 min) seasoned with s&p. I threw in a cut up apple about 10 min in.
Saute' some sweet onion
Put all in a pot and added homemade chicken stock. Cooked for about 10 min. I also added about 1/4c of applesauce I needed to get rid of, added 1/2 teaspoon curry, zipped the immersion blender through it and whola! YUMmmy
