Yes the fat profile of free range Omega eggs is healthy, and the yolk provides all the nutrition of eggs, fat soluble vitamins and minerals, etc. If you want a fat free protein source why involve eggs in the first place? Just go for a flavored whey. Much cheaper, more micro nutrients, and usually taste like a chocolate milk shake, egg whites are devoid of any nutrition besides a small amount of protein.
I assume since you avoid fat (yolks) you eat med/high carbs instead, so an amazing tasting whey with a couple carbs shouldn't hurt...
If you are going to get any fat in your diet however, not much tastier, healthier fat can be found than monounsaturated, polyunsaturated, and omega-3 fats in the form of free range egg yolks. Along with a laundry list of vitamins and minerals.
