Everyone loves banana bread. It is unwise to speak against it.
By weight:
Flour, all purpose 1280g
Baking powder 7.5g
Baking soda 21g
Salt 7.5g
Bananas, unpeeled, blackening 1930g
Lemon juice 15ml
Sugar 1280g
Eggs 340g
Vegetable oil 420 ml
Pecans or walnuts, chopped 227g
5-6 bananas will make enough batter for a standard sized bread pan, adjust other weights as needed. Liquify bananas with lemon juice, mix in wet ingredients, add dry ingredients. Bake 350F, about 1 hr, until a knife comes out clean.
