Peanut butter adds good flavoring without alot of worthless calories. Nice texture and very calorie dense.
Honestly, you may be better off getting a weight gain powder and only using 1/2 the amount of scoops.....throw in some banana, peanut butter and blend up.
Home-made weight gainer drinks are generally a pain in the @ss with all the mixing and clean-up.....been there before

I'd eat it right after a workout.

Get a good blender and use your imagination. A good blender is key. Helps you digest stuff better, by grinding things up for easier digestion. This helped me ever since I started using the blender more frequently, less trips to the bathroom.
