Here's a recipe for Teriyaki Pork Tenderloin. It makes 4 servings. Tastes pretty good too. I'll continue adding healthy recipes to this thread. Members, feel free to add your recipes here.




Teriyaki Pork Tenderloin

1 (1  lb) pork tenderloins 
1 1/2  tablespoons teriyaki sauce 
1 1/2  teaspoons cornstarch 
1/4  teaspoon ground ginger 
1 (6  ounce) can pineapple juice 



1. Trim visible fat from pork.
2. Slice tenderloin into 1/2 inch thick slices.
3. Flatten slices with palm of hand.
4. Spray a large nonstick skillet with nonstick cooking spray; place skillet over medium-high heat until hot.
5. Add pork; cook 3 minutes on each side or until browned.
6. Mix together teriyaki sauce and remaining ingredients; stir to blend well.
7. Add to skillet; bring to a boil; lower heat and simmer 3 minutes.
8. Remove pork from skillet; spoon sauce over pork.


Nutrition Facts:
Per Serving: 187 Calories, 6 Grams Fat, 25 Grams Protein, 8 Grams Carbs, 74 Grams Cholesterol, Sodium 324 mg.

DMG I am looking for low carb and low fat chicken recipes.  and dessert items that are the same.  I am keeping my calorie intake below 2000 right now.  I been doing this for almost 2 weeks now and feel great.  I am keeping my fat below 50 grams and my carbs below 100 and my protein around 200-300 grams.  Is this okay or what do I need to change.

Here's my protein-pancake recipe:

1 Can of Fat-free Evaporated Milk (if you wanted you could just use skim milk)
1 Cup of Oatmeal
6 Egg Whites
2/3 - 1 Cup of Protein Powder (I like to use Vanilla)
1 Cup of Cottage Cheese (Don't worry you won't taste it)

Put all the ingredients in a blender. Blend until it's smooth. Cook like regular pancakes. I usually top them with honey. You can also add fruit to these as well (just blend it in). I usually get about three or four days worth of breakfasts out of this recipe. I just pour it in smaller containers & store it in the fridge/freezer.

I haven't made this recipe in a hundred years, but when I did, everyone loved it ~ even the tuna haters.  There's a ton of room for tweeking to your nutritional needs (ie; more tuna, less rice, less cheese, more eggs, remove the yolks...)

Tuna Muffinettes
2 C cooked rice
2 cans tuna
1/2 C shredded cheese (chedder)
chopped black olives (optional)
Chopped onions to taste
1 T parsley flakes
1 t season salt
2 beaten eggs
2 T milk

Combine all ingredients
Put into greased muffin tins and bake @375 for 15 mins.

Serve with a lemon butter sauce drizzled on
(little melted butter, some lemon juice, season salt and parsley)

Salmon Patty

1 (14.75oz) can Pink Salmon (drained)

2½ cups rolled (old-fashioned) oats

4 egg whites (or ½c egg substitute)
2 TBLS lemon juice
2 tsps dijon mustard
Mix ingredients together
Cover & Chill for 8 hours.
Shape into 14 patties (9gC, 7gP, 5gF).
Panfry on teflon skillet, 10 minutes each side.
Can be eaten warm or cold.

This recipe is very forgiving depending on your choice of ingredients and brands ~ adjust accordingly.   For instance, you may prefer almond butter or less peanut butter and chopped nuts.  Powdered milk brands vary significantly in their counts – check your label.  I use Sanalac Do not use soy protein powder.  The result would be dry and chalky.

This is my original recipe and over the years I’ve tweaked it by using more protein powder and less fructose and replacing it with Splenda (mixed into the dry ingredients).  Dusting the little balls with protein powder before pressing them into the tins makes them less sticky.



Chewy Chocolate Protein ‘Fudge’
6 T Fructose powder (48g Carb) (NOW brand)
6+- T Water
¼ C natural crunchy Peanut Butter (32g Fat)
3 Scoops Optimum 100% Whey Chocolate Protein Powder (69g Protein, 9g Carb, 4.5g Fat)
¾ C Sanalac Powdered Milk (24g Protein, 39g Carb)
5 T Hershey’s Special Dark Cocoa Powder (10g Carb, 2.5g Fat)
3 T ground Flax Seed (optional)

Mix dry ingredients together with wire whisk – Set aside

In a large saucepan, bring water and fructose to boil.  Add peanut butter and return to boil stirring with wire whisk.

Remove from heat.

Add dry ingredients.

Stir with fork.  Mixture will be very VERY thick.  More water may need to be added a few drops at a time.

Press into sprayed mini-muffin tins and freeze for about an hour.  Remove from tin and store in sealed container in freezer.

Total recipe = 93g Protein, 106g Carb, 39g Fat
Each piece = 8g Protein, 9g Carb, 3g Fat

This sounds kinda weird, but it's actually pretty good.  It's pretty filling and satisfies that sweet tooth or peanut butter craving.

Peanut Butter Fluff

¼ -1/2C Water
¼-1/2C powdered milk (amount to equal approx. 8g protein)
1 packet Knox gelatin
2T cold water
2T boiling water
2t peanut butter
1/2t vanilla
1T Splenda

Mix  water with powdered milk.  Put in freezer with beaters for about ½ hour
Sprinkle gelatin with 2T cold water.  Let sit for 2 minutes.  Add 2T boiling water and stir.
Add peanut butter and vanilla.  Stir and let cool.
Beat milk and water until thick (like whipping cream).
Sprinkle with Splenda.
Pour in gelatin mix and beat slightly.
Chill in freezer for about an hour.

Approx. 15g Protein, 18g Carb, 6g Fat

This is how I make it in hawaii.  always had canned tuna till I moved.  I have never had canned tuna while here.  Real simple

1 to 2 lbs. of fresh Ahi tuna
Low fat mayonaise (as much as you liked dependng on how you like your tuna)
1/4 to 1/2 cup Sweet Pickle relish
1/2 tablespoon of pepper
1/4 teaspoon paprika

Grill the tuna.  let it cool.  Then mix everything together.  It is unreal tasting.  fresh tuna salad can't be beat.

This sounds good, except I don't know how much you weigh, so it's hard to tell if that's enough food for you. But I say if you feel good and like how your looking, there's no need to change anything.

TUNA SALAD

Ingredients:
- 1 small tine of tune in brine or water
- 0.5 tin of sweet corn or chickpeas
- 1 carton of coleslaw
- 1 carton of cottage cheese
- 1 carton of Waldorf or fruit and nut salad
- Some olive oil
- Some salad cream
-Some tomato ketchup
- Ground black pepper
- Oregano

Method
* Drain the chick peas/sweet corn and the tuna from the tin.
* Flake the tuna in a bowl
* Add some olive oil about 1 tsp.
* Add the tomato ketchup and salad cream if desired
* Mix ingredients
* Add the chick peas or sweet corn
* Add pepper or oregano to taste
* Add a good dollop of Waldorf salad and cottage cheese
* Add a really good dollop of coleslaw
* Mix all together

Eat with bread, tortilla,... or what you desire. It is ideal for taking to work in a plastic container and eating when desired. :PIt is a very good source of high biological value protein with some carbs, simple sugars, good oils, vitamins A, D and C.
It is very easily digested and you will get hungry three hours after. Low calorie alternatives can be found of most of the ingredients. For a vegetarian alternative remove the tuna and used small cubes of tofu. You can try adding olives if you like and experiment!

RECIPE FOR WHEY CHEESE CAKE

Ingredients:
1 cup low fat honey graham crackers (crushed)
1/4 cup melted sweet creamy butter (salted) low fat
1/2 cup Splenda
3 tablesthingys cake flour
1/4 teasthingy salt
2 egg whites
1/2 cup nonfat milk
16 ounces fat free cream cheese
1 teasthingy vanilla extract
150 gms Whey Protein - Cholcate, Vanilla, Strawberry whateva you prefer

Directions:
1. Preheat oven to 350 degrees F.
2. Melt butter in 8" round baking pan.
3. Be careful, make sure butter does not burn.
4. Remove from heat and stir in graham cracker crumbs until evenly distributed.
5. Press evenly and firm throughout the baking pan.
6. Bake crust for 10 minutes, remove and set aside.
7. Reduce heat to 325 degrees F.
8. With electric mixer, mix cream cheese, splenda, vanilla extract, egg whites, WHEY protein until thoroughly mixed.
9. Add cake flour, salt, and milk.
10. With electric mixer,mix thoroughly.
11. Pour the batter into the cooled crust and bake for 1 hour at 325 degrees F.
12. Let cool at room temperature for about 20 minutes.
13. Place in regrigerator and chill for at least 2 hours.
14. Hey, it's definitely not the real thing-- but at 165 calories/serving, (1/6 of the cheesecake), it tastes pretty d**n good!

Calories 165
Total Fat 0.1g
Carbs 12.6g
Protein 18-20g

Caution: The cake tastes good but remember its not real cheese cake so dont be disappointed its just low fat and quick high protein desert

1 or 2 chicken breast
1 Goerge Foreman grill

Turn on grill.  Put chicken on grill for 3 minutes without salt or anything.  Eat chicken.

Easy Chicken Boobies

1 Reynolds Cooking Bag
6 Chicken Breasts
Marinade of your choice (about 1 cup)

Throw the boobs in the bag with the marinade.  Squish.  Cut a few slits in bag.

Put in/on cooking dish/tray and  bake about 45 mins @ 350.  Tender & juicy - no mess.

Anyway, here's another recipe:

12 egg whites
1 cup of Skim Milk
1 cup of uncooked oatmeal
1 cup of Protein Powder
2 Tablespoons of Flax Oil

Put the items above in a blender & blend until smooth. Cook like any old pancake mix.

A little different recipe tastes a little more like "real" pancakes.

Glad you liked the pancakes. I've got to say that they keep really well in the freezer. I made several batches about a month ago & froze them (which was good because my blender died). I'm still eating them & they taste fine.

fetucinni 1/2 lb and ore ida fries 1/2 lb in a bowl,,allmixed together with a tall cup of Apple juice.

talk about some mass builder.  works wonders.....eat it once a week myself.

Your very creative all recipes,I have to try some ,have done pancake recipe with oatmeal for years it's good,I just started to experiment with new twist to post training shake,take  2 scoops of choc whey,glutamine,maybe i'm crazy 1 tbls dry ground espresso ,1 teaspoon nutella hazlenut spread ,lots ice!

Cream Chees Protein Bar
(recipe for one bar)

In a large bowl with room for both hands, add:
1 TBL creamcheese
4 1/2 tsp granulated fructose
2 tsp Peanut Butter
Blend together with the back of a spoon.
Add 1/4 cup Whey Protein Powder & blend together.
This will probably not bind together and will
seem rather dry & crumbly as is so get in there with your fingers and knead it.

I usually make something similiar to this for lunch about twice a week.

1 cup of instant Brown Rice
8 ounces of Ground Beef (already cooked)
1 can of Black Beans
1 cup of Water
Hot Sauce & whatever seasonings I want.

Microwave for about 10 minutes & I've got two meals.

Chicken & Spinach Stirfry pita

George forman grill the chicken plain. (or marinade in low salt soy sauce for several hours before)

1 - Box of Chopped Spinach (usually in frozen veg section)
2 - Small onions (or 1 med onion, suit to taste)
Garlic (measure to preference)
1 tsp- Sesame oil
1 Tbsp - Extra Virgin Olive oil

-Drain / Squeeze all water from Spinach.
- Fry onion and garlic in the two oils until very browned
- Add spinach fry until the mix has almost a dry look to it.

Add to a plate of sliced chicken breasts with rice or yams..or stuff in a whole wheat pita.

Spinach absorbs the sesame flavor and it is wonderful..my kids even eat it!

I couldn't live w/out "I can't believe it's not butter butterspray"

8 oz. chicken breast made on the George Foreman.. 3 minutes per side
One side seasoned with Garlic Pepper blend
The other side seasoned with Mosquite (sp) chicken seasoning
One cup white rice (post cooked)
One cup Broccoli
--Cut the chicken up into bite size pieces.. put in Tupperware with rice and broccoli.. take the lid off the butter spray and pour over the top... Then mix
Tastes unreal...


Steak--

8 oz. eye round steak made on the foreman.. approx. 1 1/2 to 2 minutes per side
1 cup white rice
1 cup broccoli
1 Slice Kraft fat free cheese
...Cut the steak into bite size pieces..put in Tupperware... add rice and cut up slice of cheese.. the cheese will melt... now add broccoli... now like before add the butter spray

Eggs...

Take 8 egg whites and 2 yolks and scramble.. use Pam spray on the skillet.. after the eggs are cooked put them on your plate and pour I can't believe it's not butter spray over them (not too much or it will taste off) ....then sprinkle some Texas Pete hot sauce.. now add salt and pepper... Taste is awesome..
--1 cup oats... add cinnamon and 1/2 cup raisins..

Sheppard's pie

Ground 1/2 pound sirloin like when making tacos... add 1 cup of mashed potato's.. for the potato's you can use skim milk and butter spray if it calls for butter... add 1/2 cup of corn.. mix everything...yummy.

--Those are my staple meals and what I add to make them bearable day after day  ;)

Stevia Whole Wheat Banana Bread Recipe

According to www.rochestergoodfood.co m, this recipe won a red ribbon at the 1987 Arizona State Fair. Stevia is a South American herb that is virtually calorie-free and hundreds of times sweeter than table sugar. Look for it at your local health food store or at Trader Joe's(I GET MINE AT WILDOATS).


1/4  cup melted butter 
1  cup ripe bananas, smooshed or mashed  -- I USE MORE
1  teaspoon vanilla 
2  eggs 
1/3  cup milk 
1 1/2  cups whole-wheat flour  -- I USE WHOLE WHEAT PASTRY FLOUR
1  teaspoon baking soda 
1  teaspoon stevia powder 
1/2  teaspoon salt 
1/2  cup nuts, chopped 

1 loaf Change size or US/metric
Change to:  loaf US Metric
 
1 hour 20 minutes 20 mins prep

Preheat oven to 350F and grease a 9x5 loaf pan.
In a large bowl, mix together butter/oil, bananas, vanilla, eggs, and milk.
In a medium bowl, combine the dry ingredients (flour, soda, stevia, salt).
Mix the dry ingredients with the wet ingredients until just combined.
Fold in the nuts.
Pour into pan and for about 1 hour, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for a couple minutes to set, then remove from the pan and cool completely on a rack.

takea roast of beef or pork
poke holes all around it and stuff it with garlic cloves, season with taragon, cumin and coriander, add sweet potato around it ,onions and bake on low heat for 3 hours

my favorite carb source

get a big boiling pot and boil some water

Toss in 1 bag of brown rice, and a bag of spaghett and let sit for bout 10 mins so it soaks up water and is ready for cookin..

Then i toss in 2 cans of hormel turkey chilli, 2.5 lbs of either lean beef or chopped up chicken, 1 can of bushes baked beans, 2 cans of black beans, either 1 bag of mixed veggies or 3 cans of mixed veggies (change up what kind all the time), and just stir it up and let it simmer for bout 30 mins.

Sometimes i like addin in 1-3 jars of spaghetti sauce. 
this usually lasts me bout 5 days or so.  I usually ahve a big bowl of this and a chicken breast atleast 3 tiems a day( my other 2-4 meals are different).

Mm Mmmmm good eatin and healthy as hell

Yeah, they're easy to clean up as long as your meat isn't burnt to a crisp. Where the fat is collected, empty it out, wash w/ soap and water obviously. And the grill, you really just need a sponge or dish towel (sponge works better for me since cleanup is usually easiest while the grill is unplugged but still a little hot). Just don't use anything abrasive. It's fun to see how much fat collects in the bin at the bottom while grilling.

Creamed Spinach--side dish

8 - 10 oz fresh clean spinach leaves

1/2 cup (more or less depending on how "creamy" you want it) fat-free sour cream

2 Tablespoons (more or less) grated Romano or Parmesan cheese


Pour about 1/4 cup water in a large saucepan.  Put in the spinach and Cover.  Cook on high until the spinach wilts (about 2-3 minutes).  Squeeze water out of spinach.  Combine spinach, sour cream and cheese together in the saucepan and heat through.  

1 serving.

Here is the all time best breakfast buritto

7 egg whites (egg beaters garden vegetable)
1 whole wheat tortilla (buy the low fat low carb whole wheat tortilla from LaTortilla factory avaialble at Pavillions in Cal. and probably elsewhere)
1/4 lb salmon, pre-cooked

scramble the egg whites, throw in the salmon at the end (chopped up into cubes), toss in some scallions, pre-heat the tortilla in the microwave, add the scrambled eggs/salmon and enjoy

Here is another great protein pancake recipe:  (especially for cutting)

Protein Pancakes (makes 2 pancakes)
2 scoops whey (vanilla works best)
2 egg whites
1 packet sugar free cider mix
1 T. sugar free Torani sugar free carmel syrup (ya know the coffee syrup)

*mix, pour into pan, and serve
*devour!

I use Golden Griddle's sugar free maple syrup with mine....there is only 8 grams of carbs.  This works great on a low carb day...Enjoy!

add half the recommended amount of boiling water to a packet of jello and stir till crystals dissolve. let it cool in the fridge. when the solution cools off just before it starts to congeal add no more than 500 ml of cold egg whites and mix. leave in the freezer for 1/2 hour.

Spicy/Sweet Chicken

Ingredients:
2-3 chicken breasts or 12 chicken tenders
2 Tbsp Low-sodium worcestershire sauce
3 Tbsp Hot sauce
3 Tsp Honey
1/2 Tsp Paprika
1/2 Tsp Garlic
zip lock bag

In a bowl, mix worcestershire sauce, hot sauce, honey, paprika and garlic and stir until all ingredients are mixed. Pour about half the mix into a zip lock bag along with the chicken breasts. Shake the bag until the chicken is coated with the sauce. In a preheated, olive oil coated skilled on medium-high heat, cook the chicken. A few minutes before you predict the chicken will be done, pour the remainder of the sauce mix onto the chicken breasts while cooking. And just wait until they're cooking thoroughly and enjoy.

SOFT TACOS WITH GRILLED HALIBUT, GUACAMOLE AND S. AMERICAN SLAW

Slaw:

8 oz jicama, peeled and coarsely shredded
1 med carrot coarsely shredded
1 sm. red bell pepper, stem and seeds removed, thinly sliced
1 sm. red onion, halved lengthwise and thinly sliced crosswise
2 T. extra virgin olive oil
2 T. fresh lime juice
1/2 t. granulated sugar
1/4 t. ground cumin
1/4 t. kosher salt
1/4 t. freshly ground black pepper


Guacamole:

2 large ripe Hass avocados, mashed
1 T. finely chopped fresh cilantro
2 t. fresh lime juice
2 t. minced garlic
1/2 t. kosher salt
1/4 t. freshly ground black pepper


4 halibut fillets, about 8 oz each and 3/4 in. thick
extra virgin olive oil
1 t. pure chile powder
1/2 t. kosher salt
1/4 teaspoon freshly ground black pepper

8 flour tortillas (8 inches)


1.  To make the slaw:  In a med. bowl, toss to combine the slaw ingredients.
2.  To make the guac:  In a med. bowl, combing the guac ingredients and stir w/a fork until thoroughly blended.  Cover the surface w/plastic wrap to prevent browning.
3.  Lightly brush or spray halibut all over w/oil; season w/the chile powder, salt and pepper.  Grill over Direct High heat until the halibut just begins to flake when you poke it w/the tip of a knife, 6-8 minutes, turning once.  Remove from the grill and break into 1 inch pieces w/a fork.
4.  Heat the tortillas over Direct High heat for about 20 seconds per side.  Wrap in a kitchen towel to keep warm.  For each taco, layer a warm tortilla w/fish, slaw and guac.  Roll up loosely.  Serve warm.

Makes 8 tacos.

SHRIMP TACOS


Salsa

1 ear corn, husked
6 scallions, white and light green parts only
1 med. poblano chile
1 c. cherry tomatoes cut into 1/4 in. dice
1 Hass avocado, cut into 1/4 in. dice
1 T. finely chopped fresh cilantro
1 T. fresh lime juice
1 t. minced garlic
1/2 t. kosher salt, divided
1/2 t. freshly ground black pepper, divided

32 large shrimp, about 1 1/2 pounds, peeled and deveined
8 flour tortillas

1.  To make the salsa:  Brush or spray the corn and scallions all over w/oil.  Grill the corn until browned in spots and tender, the scallions until lightly marked, and the chile until black and blistered in spos, over Direct Medium Heat, turning occasionally.  The corn and chile will take 10 - 12 minutes and the scallion will take 3 - 4 minutes.  Trim the root ends off of the scallions; finely chip the remaining parts and put them in a med. bowl.  When cool enough to handle, peel off the loosened bits of skin from the chile and discard along w/the stem; finely chop the remaining parts of the chile and add to the bowl.  Add the remaining salsa ingredients, including 1/4 t. salt and 1/4 t. pepper.  Drizzle 1 T. of olive oil into the bowl and mix thorougly.
2.  Brush or spray shrimp all over w/oil and season w/the remaining 1/4 t. salt and 1/4 t. pepper.  Grill over Direct High Heat until the shrimp are firm to the touch and just turning opaque in the center, 2 - 4 minutes, turning once.  Grill the tortillas over Direct Medium Heat until warm, 30 - 60 seconds, turning once.  Fill the tortillas w/salsa and shrimp.  Serve warm.

Makes 4 servings (8 tacos)

Tuna/salmon And Cheese Dip

1 block of fat free cream cheese (may have to be softened in the microwave)
2 6oz cans of tuna drained or u could use salmon
red/cayane pepper (optional)

just dump the cheese and fish into a big bowl and mix it up REALY well the more the better. put it on a sammich or eat it on some fat free crackers, no fat and packed with protein.  be sure to cover the bowl if u keep it in the fridge.

Peanut butter oatmeal

1 bowl cooked oatmeal
natural peanut butter

just mix about 4 table spoons of PB into the cooked oatmeal until the peanut butter is liquidated and combined with the oatmeal.  good pre-workout meal.  best to finish it before it gets cold.

Is it tuna? fruit shake

orange juice or apple juice or both
2 cans tuna
banana (optional)

pour a good bit of juice into a blender, add tuna, puree.  this is good for ppl that cant stomach tuna cuz u cant taste it at all.  and with the orange juice the tuna just kinda feels like pulp.

right now i'm really looking for some really good low carb meals.  this international market place sells a seasoning that makes this Indian(dots not feathers) dish called "Tandori Chicken".  Very spicy, probably the best chicken ive ever tasted.  Im not sure how easy it is to find in a regular grocery store i cant find it any where other than this specific market.  If anyone has any other good low carb meals post em please.

Ahi Tuna Marinade:

2 - 1 to 1 /12 inch thick Ahi Tuna Steaks

Marinade:
1 cup soy sauce
2 cloves minced garlic
1/2 c. fresh lemon juice
Salt and pepper to taste

Combine marinade ingredients and marinate the steaks for 1/2 hour turning to coat.

Spray both sides of tuna w/Pam just before grilling.

Grill 2 1/2 min. per side for medium rare.

Tuna and couscous burgers

two tins of tuna
herbs (eg oregano, basil, whatever you want)
an egg to bind it all
prepared couscous

basically mix everything apart from the couscous together, knead the mixture and turn into patties.  then coat them in the couscous (if it doesn't stick beat an egg, dip the burgers in this and then coat).  Then just fry them in a frying pan.

I know this seems just like your average tuna burger but the couscous makes it taste and look amazing with very few carbs.

hmm yea that's why i like the tuna cause no cooking is necessary (unless i'm supposed to be cooking these can's of tuna!) I'm not sure but maybe if you got one of those foodsaver things it might help but anyways here is how i make my chicken which i find to be quite easy and healthy(tell me if i'm wrong here)

1. i take a tupperware and put a few ounces of lime juice in it
2. and add a bit of cilantro(they have these new tubes of spices sort of in a tooth-paste tube like bottle in the fresh fruits section of the supermarket i'm not sure if they have it everywhere but they have it at kroger/lowe's(you prob don't have)/harris teeter(prob don't have)
3. salt, pepper,
4. a bit of celery flake mix it up and shake.
5. let sit for at least half-hour in fridge( although i believe you can do it at least 1 day in advance and it'll still be fine at least i still eat it if i mix one up and i don't eat it i'll still eat it the next day)
6. grill chicken on medium/medium high heat 1 minute on each side
7. take off heat for a moment during last 30 seconds or so of the second minute of grilling
8. add lime juice/cilantro mixture to chicken it should steam up pretty good and turn sorta brown color
9. cover and cook for 8-12 more minutes the liquid should make it so chicken can't come out dry/over cooked it's probably done when all the liquid has evaporated
10. Wallah delicious chicken made in 10 minutes and it probably shouldn't be too dry if you save and re-heat because the moisture content of the chicken is usually quite high

I thought I did put up a good recipe....  :'(

Anyway, here's another recipe:

12 egg whites
1 cup of Skim Milk
1 cup of uncooked oatmeal
1 cup of Protein Powder
2 Tablespoons of Flax Oil

Put the items above in a blender & blend until smooth. Cook like any old pancake mix.

A little different recipe tastes a little more like "real" pancakes.

HOLY FUCKKKKKKK. i just tried this(literlally a few minutes ago i was eatign tis stuff)...goddamn!! thats all i can say.


i put a little bit of connamon on top of each pancake, i used weight smart oatmeal which has no suagr and lots of fiber, i used only 2 scoops of protein, two pouches of oatmeal, 4 egg whites, and some fat free milk.   i could barely finish half of the pancakes it made!!

that means i just got totally filled up off off about 40 grams of protein and 30 grams of carbs. fucking amazing pre workout nutrition right there!!!! dieting is going to be so easy now that ive found this.





you ever make frosting from scratch? you take powdered sugar and mix it with a littel bit of milk. you keep adding small amounts of milk untill you get the frosting consistancy witt the powdered sugar. well the first pancake i ate taste bomb, but it was dry.(which explains why peopl nomrally eat pancakes with syrup.) so i made my own forsting, but instead of powdered sugar i used powdered....WHEY PROTEIN!! hahaha. fucking brilliant!!   it gave an awesome vanilla taste to my already momb ass paancakes, and it was one hundred ercent protein...


i am so excited about this new found way to eat.

For dessert lovers

Low Fat Trifle

1 Angel food cake
4 boxes instant vanilla non-fat pudding
2 pints strawberries or frozen berries
1 large non-fat cool whip
skim or 1% milk

1. Make pudding according to package but reduce milk needed by 1/2 per box of pudding
2. Assemble trifle by layering (bottom to top)
angel food
fruit
pudding
cool whip
3. Repeat layering until used up
4. Refrigerate for 2 hours before serving

Guilt-Free Banana Cream Pie

1 box non-fat vanilla pudding
2/3 cup non-fat powdered milk
1-1/3 cup cold water
1 large non-fat cool whip
3 ripe bananas, sliced
1 pre-made graham cracker crust

1. spread bananas evenly on bottom of pie crust
2. in metal or glass bowl only, mix powdered milk and pudding mix
3. add cold water, beat at low speed for 2 minutes until mixture is the consistency of custard
4. add 1/2 tub cool whip and beat until folded into pudding mixture. S[ppn all over bananas and chill 3 hours

*can substitute non-fat chocolate pudding mix and omit bananas for non-fat boston cream pie

Put all the ingredients in a blender. Blend until it's smooth. Cook like regular pancakes. I usually top them with honey. You can also add fruit to these as well (just blend it in). I usually get about three or four days worth of breakfasts out of this recipe. I just pour it in smaller containers & store it in the fridge/freezer.
heres my daily recipe(everymorning!)

22 egg whites(11 servings egg beaters)
1 cup oats(quaker original)
1 cup wheat bran(quaker brand plain)
1/4cup cinnamon
1/4 cup pumpkin pie seasoning(only sometimes..an  use a bit less cinnamon when i use the pumpkin too)
1/4 cup splenda


suagr free low calorie syrup once they are cooked. (the whole bottle of syrup contains 6 servings..  and one serving has 3 grams of carbs..and they are sorbitol(extremely slow digesting) !!)   i use this syrup like its the cure for the plague and im living in the dark ages.

Grilled Sechuan Steak/Chicken Breast

I eat this often and i never get tired. Sechuan pepper is one of the key elements in chinese cuisine.

Add some to your steak/chick breast, grill it, and have a nice meal.

Better than adding lemon & species to chicken breast or garlic to the steak

1 Put in two tablespoons of skim milk powder in blender

2 200mls of skim milk into the blender

3 half cup of fresh and fruity yogart or any other low fat yogart. Blend for 20 seconds or untill it nice a frothy.

I sauteed 1/2 cup each celery onion and diced apple ( in just water and a little olive oil )
mixed it in 1 1/2 pounds of ground turkey

added some chilpotle sauce made patties and grilled them

Kraft Dinner Pizza:
Cook Kraft dinner, strain water and add cheese mix.  No need for milk or butter, the noodles have enough water in them for the cheese to mix properly.
Spread the noodles on a pizza pan.  Add your choice of sauce, layer veggies, meat (chicken breast/ham/beef/turkey), cheese, and spices.  Bake for 30-45 minutes.  A two pound pizza is loaded with carbs, protein, and has about 20 grams of fat.

The fats, are healthy, and the carbs are due to the vegs and yolk of the eggs.
Adjust whole XL eggs with Egg whites if your dieting like myself.

im sure everyone has cooked chicken breast every way possible but i like to bake thawed chicken breast at 350 for about 30 mins. i slice up a onion and a lil artichoke heart and put them on top with a lil olive oil (or not... depends) garlic powder and pepper. taste pretty good - usually eat with a bowl of noodles

Actually every picture he posted looks good ...I went to the link for those muffins and this guy really has done a lot of work on these recipes...posted his recipe/taste review/nutritional info etc!

Some of the stuff tastes pretty amazing. Some come out kinda bland to the normal person. I typically enjoy the bodybuilding foods and if it comes out too bland, I just use some peanut butter or make a whey sludge.

Chili recipe I've used in the past with ground turkey. It's damn good!

1 T oregano
2 T paprika
6 T Chili powder, light
4 T cumin
4 T beef bouillon (instant, crushed)
10 cloves garlic, finely chopped or powder for substitute
1 tsp parsley or cilantro
4 Cups water
1/2 C olive oil
4 lb extra lean chuck, chili grind (substitute turkey/venison if needed)
2 lb extra lean pork, chili grind
1 lb extra lean chuck, cut into 1/4" cubes
2 large red onions, finely chopped
2 cans Bush's Best Dark Red Kidney Beans
2 cans Bush's Best Black Beans
24 oz crushed tomatoes
In a large pot, add paprika, oregano, chili powder, cumin, beef
bouillon, garlic, chopped onion, and 4 cups water. Let simmer low heat.
In a separate skillet, brown meat with FAJITA seasoning in 1 lb. or 1
1/2 lb. batches with
olive oil. Drain and add to simmering spices. Continue until all meat is
done.
Add water as needed.
Simmer 2 hours medium heat.
Add crushed tomatoes.
Add salt to taste.
Simmer 45 min.
Makes 1 pot.

My dad hates healthy food and he kept sneaking into my tupperware to steal some. These are NOT for those with a sweet tooth. It is sweet but not overly sweet. The best way to describe it is if you have tried the Chinese Red Bean Nian Gao.

They are light and not dry, pretty good snack, but not really a dessert.

Personally if you are crazy for sweet, add some sugar/honey/artificial sugar/chocolate. I purposely did not put any sugar in it to keep it extra healthy.

Thanks maybe these would be what I'm looking for for a breakfast bar when needed.  Have you tried freezing them?

I'm sure they would be fine frozen. I personally kept them in a tupperware on the counter. I think refrigerating them would of been smart :p.

The recipe offers a good base for you to play around with what stuff you like, it is pretty flexible. It would work pretty well as a breakfast bar.

   I rarely measure anything unless I'm baking.  In this recipe it won't matter anyway.
       
Ratatouille

   flour seasoned with garlic powder, dried basil, Italian seasoning, fresh ground pepper
   olive oil
   garlic, crushed and minced
   1 large Vidalia onion, quartered and chopped/sliced
   1 large eggplant, cubed (salted, rinsed and dried)
   bell peppers (red, orange &/or yellow), coarsely chopped
   2 cans (14.5 ounces each) diced tomatoes - (1 can with green chillies)
   3 to 4 small zucchini, cut into 1/4-inch slices
   dried basil
   dried Italian seasoning
   balsamic vinegar
   sugar or Splenda
 
Put the seasoned flour in a plastic bag.
Slice the eggplant (1/2 inch thick) and salt each side - put it back together and let it sit
Chop the zucchini, peppers, onion and garlic and saute in olive oil until semi tender. Remove from pan and set aside.

Rinse the eggplant, pat dry and cut into cubes.  Put in bag of seasoned flour and shake.  Put in colander to shake off excess flour.

Heat pan and add olive oil.  Add eggplant to hot oil.  Stir only when it starts to get brown.  You'll probably want to do this in 2 batches.  Remove from pan.

Add cooked vegs back to pan with tomatoes and seasonings.  Bring to simmer and add eggplant. Add about a tablespoon or so of balsamic and about a tablespoon of sugar.

This is really good with diced up chicken, or canned salmon/tuna, or by itself.  For extra yummyness top with feta cheese  ;D

cooked salsa

10 habanero peppers
5 jalapenos
3 serrano peppers
3 thai chili's
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 large bulb of garlic
1 large onion
1 tsp. salt
1 1/2 - 2 tbsp. ground comino
1 1/2 - 2 tbsp thyme
2-3 tbsp dried cilantro
2 28 oz cans of petite diced tomatoes
1 - 1 1/2 cups red wine vinegar

Dice peppers and set aside.  peel and chop onion, peel and chop garlic.  lightly coat large pan with cooking spray and heat garlic and onions over medium-high heat.  When soft add the peppers.  Cook for 2 minutes add vinegar, salt, comino and cilantro.  Cover and let bubble 10-15 minutes.  Add tomatoes simmer uncovered for 20 miutes.  Chill and eat.  I like to add a little bit of fresh cialtnro before serving.  Great on eggs!

Weight Watchers Black Bean Brownies
Servings: 20 servings • Time: Baking time varies • Points: 2 ww points

    * 1 can (15 oz.) black beans
    * 1 box brownie mix

Open can of beans, drain and rinse well. Put beans back in the can and fill can with water. Put beans and water in blender until smooth. Mix pureed beans with brownie package mix. DO NOT add eggs or oil. Spray baking dish with Pam. Cook brownies according to package directions. Cool and serve.

Here's my protein-pancake recipe:

1 Can of Fat-free Evaporated Milk (if you wanted you could just use skim milk)
1 Cup of Oatmeal
6 Egg Whites
2/3 - 1 Cup of Protein Powder (I like to use Vanilla)
1 Cup of Cottage Cheese (Don't worry you won't taste it)

Put all the ingredients in a blender. Blend until it's smooth. Cook like regular pancakes. I usually top them with honey. You can also add fruit to these as well (just blend it in). I usually get about three or four days worth of breakfasts out of this recipe. I just pour it in smaller containers & store it in the fridge/freezer.

I made this today when I was craving something sweet.  It's pretty solid for a precontest meal (just over 9 weeks out).  

Mix 1 1/2 cups of ricotta cheese with 1/2-1 cup of blueberries and 3 (or more) packs of artificial sweetener.  Top with 1/4 ounce crushed almonds mixed with 1/2 cup of crushed Fiber 1.

330-370 calories, 33 grams of protein, alot of fiber and some healthy fat.

I saw this recipe .. can't remember where .. and tried it .. they were good

5 egg whites
1 1/2  scoop vanilla protein powder
5 heaped TBS pumpkin puree
1 1/2 tsp pumpkin pie spice (depending on taste)
Stevia/Splenda/Aspartame to taste (I used 4 drops of liquid Stevia)

Cook like pancakes over medium heat. Makes 8 smaller 'cakes or 4 medium-large ones.

Spread peanut butter on a 'cake, and sandwich it with another 'cake.

Here's a recipe for Teriyaki Pork Tenderloin. It makes 4 servings. Tastes pretty good too. I'll continue adding healthy recipes to this thread. Members, feel free to add your recipes here.




Teriyaki Pork Tenderloin

1 (1  lb) pork tenderloins 
1 1/2  tablespoons teriyaki sauce 
1 1/2  teaspoons cornstarch 
1/4  teaspoon ground ginger 
1 (6  ounce) can pineapple juice 



1. Trim visible fat from pork.
2. Slice tenderloin into 1/2 inch thick slices.
3. Flatten slices with palm of hand.
4. Spray a large nonstick skillet with nonstick cooking spray; place skillet over medium-high heat until hot.
5. Add pork; cook 3 minutes on each side or until browned.
6. Mix together teriyaki sauce and remaining ingredients; stir to blend well.
7. Add to skillet; bring to a boil; lower heat and simmer 3 minutes.
8. Remove pork from skillet; spoon sauce over pork.


Nutrition Facts:
Per Serving: 187 Calories, 6 Grams Fat, 25 Grams Protein, 8 Grams Carbs, 74 Grams Cholesterol, Sodium 324 mg.

Baked Stuffed Chicken

    * 2 tablespoons extra virgin olive oil (EVOO), divided
    * 1/2 medium onion, finely chopped
    * 3 large cloves garlic, finely chopped, divided
    * 1 box organic chopped spinach (10 ounces), thawed
    * Salt and pepper
    * Freshly grated nutmeg, to taste
    * 3 tablespoons butter
    * 1 cup panko breadcrumbs
    * 1 teaspoon dried oregano (about 1/3 palmful)
    * 4 boneless, skinless chicken breasts
    * 1/2 cup crumbled Greek feta cheese

Preparation

Pre-heat the oven to 425°F.

Heat 1 tablespoon EVOO, one turn of the pan, in a small skillet over medium heat. Add the onion and two-thirds of the garlic and cook until softened, 3-4 minutes. Transfer to a bowl to cool, then add the spinach and season with salt, pepper and nutmeg. Melt the butter in the same pan, turn off the heat and add the panko, oregano and remaining garlic; toss.

Drizzle a baking dish with the remaining 1 tablespoon EVOO. Split each chicken breast across (but not all the way through) and open like a book. Stilton Chicken


Ingredients
4 chicken breasts
150 g blue cheese, of your choice (e.g. Gorgonzola, Dolcelatte, Stilton)
6 rashers of streaky bacon, or Pancetta or 12 thin slices of Prosciutto (parma ham?
3 tbsp olive oil
1 pinch black pepper

Method
1. Cut a pocket in the side of each chicken breast.

2. Mash the cheese with a fork and push into the chicken.

3. Re-shape the chicken breast with all the cheese in it and then tightly wrap your chosen slices of porky meat around each breast.  Use wooden toothpicks if needs be.

4. Rub a little olive oil over each of the chicken breasts and fry lightly for a minute or so on each side.

5. Wrap each chicken breast in a foil parcel. Place on the barbecue and cook for about 20 minutes (alternatively, if you prefer using the oven, place the foil parcels on a baking sheet and cook at 190°C/Gas 5 for 25 minutes). Serve immediately.




approx 1000 or 1500+ calories per breast
serve with gusto and Prosecco

I made a good salmon salad ... I had grilled four salmon portions and with the leftover 3 the next day .. I flaked them up and mixed them in with 3 hard boiled chopped eggs .. 1/2 Cup white onion .. 1/2 cup green bell pepper and 1/2 cup chopped cucumber .. added a little low fat mayo and it's really good on lettuce leaves like a wrap !!

Sounds ok.  I would use low sodium soy and / or low sodium stock otherwise it would be too salty IMO.  Shitakes would be good too.

Chilaquiles Casserole


(found this on the Eating Well site and tried it .. it's really pretty good )

1 tablespoon canola oil
1 medium onion, diced
1 medium zucchini, grated
1 19-ounce can black beans, rinsed
1 14-ounce can diced tomatoes, drained
1 1/2 cups corn, frozen (thawed) or fresh
1 teaspoon ground cumin
1/2 teaspoon salt
12 corn tortillas, quartered
1 19-ounce can mild red or green enchilada sauce
1 1/4 cups shredded reduced-fat Cheddar cheese


1.Preheat oven to 400°F. Lightly coat a 9-by-13-inch baking pan with cooking spray.
2.Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until starting to brown, about 5 minutes. Stir in zucchini, beans, tomatoes, corn, cumin and salt and cook, stirring occasionally, until the vegetables are heated through, about 3 minutes.
3.Scatter half the tortilla pieces in the pan. Top with half the vegetable mixture, half the enchilada sauce and half the cheese. Repeat with one more layer of tortillas, vegetables, sauce and cheese. Cover with foil.

they suggest all types of substitutions /additions etc.

add shredded chicken/beef ... use roasted tomatoes in place of canned ... add diced peppers and so on .. with changes made this can be a recipe I use several times and not get bored of it

Take a look at the ingredients of real soy vs. low sodium.  I don't like the extra shit they add to low sodium. Especially when I see 'caramel color'

I don't think all soy sauces are created equal, so yes, check the label.  The Kikkomen site has some good info on the "process".

Less sodium = less taste.

People will use more to reach the same taste, hence sodium will be almost the same AND you get more of the other stuff that is in it.

You don't use liters and liters of soy sauce anyways take the real stuff and use it sparely.

Kikkoman is the biggest brand, but go to a Japanese shop and try other ones too, they all taste quite differently. I personally think Kikkoman tastes like shit.
Also check out soy sauce especially made for Sashimi, it is totally different.
Many Japanese enhance their soy sauce with dashi, you can find already mixed sauces in Japanese shops I would guess. Here in Japan you can buy the mixed ones in the supermarket.


Then, chinese soy sauce is again completely different from Japanese soy sauce.

LOL, yeah fish sauce is good.  ;D ;D

Well if you don't like the normal one, low sodium is the way to go.


Do you use miso? It's not only great for soups but also just stir fry some veggies and chicken and put a spoonful of miso over that, stir it until melted and mixed.

Tapenades are usually made with  olives.  This one uses sun dried tomatoes which is much more appealing to a crowd IMO.  I like to serve with a neutral chip, cracker, pita, toasted bread or on a cuke round.  A great simple make-ahead for a party.

Sun-Dried Tomato Tapenade
• 1 cup sun-dried tomatoes packed in oil
• 3T finely chopped red pepper (I use one small pepper or ½ lg pepper)
• 5 cloves garlic, finely chopped
• 6 oz feta crumbled
• 2T dried basil
• 1/2t pepper
• 2t balsamic vinegar
Remove the tomatoes from oil (reserve 1/3 cup oil) and chop finely.  Stir together tomatoes, 1/3 cup reserved oil, red pepper, and garlic.  Add crumbled feta over top and add remaining ingredients.  Stir to combine.  Cover and refrigerate at least 4 hours or overnight.
Serve with cucumber slices or bake on 1-inch baguette drizzled with olive oil at 350 degrees for 6 minutes.

IMO 5 cloves of garlic are way too much unless it's super fresh.  Start with 2 at the most and see what you think.  Also, I combine fresh and dried basil and other colored peppers for visual appeal.  I've tried various brands of sundried  tomatoes and always go back to (http://4.bp.blogspot.com/_uVs0GQPcaeo/SmVBOXU3K6I/AAAAAAAAAI0/M6jcuGGQZ7Q/s320/P1010734.JPG)  
Save the oil for other recipes.  An easy way to finely chop garlic is on a coarse blade microplane.

I've used plain goat cheese in a pinch, but it's a bit soft.  If you're familiar with feta, then you'll know the taste and texture you're going for in this recipe.

Yeah sure, but cheese in general is a pain in the ass to get here, and 100g of Feta will cost me about 25$$, so IF I ever will choose to buy one I will not waste it.

I will start though making my own cottage cheese later this year, and am looking for other easy-to-make cheese recipes.

I love cheese, especially all sorts of goat and sheep milk cheese, but that is VERY VERY hard to find in Japan, even if you find Feta it's normally the type made from cow's milk.

It's like finding "Grade A" tuna in the US, lol. Doesn't exist.

Plain Greek yogurt available?  Maybe this would work.  Add salt and strain it more through coffee filters.  I've never added salt, but I've made yogurt cheese that way.  Ends up being the texture of goat cheese.
