  Those carbs may come from fiber, and fiber doesn't really impact blood sugar levels the way other kinds of carbs do.

I would suspect it's the ERYTHRITOL which would be a sugar alcohol ~ ie; 'itol'

Could be the modified food starch also.  That's the same ingredient in the Low-Carb White Tortillas, that apparently counts as fiber.

The Xanthan Gum also contributes to the caloric content...

It reminds me of Peanut Butter labels. You will see "0" Trans fats, yet you will see Partially Hydrogenated Oils in the ingredients. Hydrogenation is the process where a solid fat is chemically altered and made into a Trans fatty acid. Basically a soft, runny oil is heated into a more solid one. In other words you would be pouring your peanut butter out of the jar instead of scooping it out with a spoon or a knife.


Here's the kicker: The FDA makes a small allowance of around 4 to 5 grams leeway, but you can't read that on the label anywhere. Peatur butter can be a good food, but it will probably never be that good tasting without some hydrogenation.

Just stay away from the cheap buckets of "Fully Hydrogenated" types. That's some serious Tranny fatty shiznit.
