If you mean from a project file that you have then simply edit the text in the layers bar, if you mean for an orignal picture that you dont have the project file for then I find the clone tool easiest.

Yes, usually I would use the clone tool but it is too big for this:

The grey text header box in German at the top, have to get rid of the text and keep the original colour, but it is too cramped to use the clone tool; any suggestions?

I dont get you, I just saved the image you said and cloned out one of the words and it looked fine,just zoom in on the image and shrink the clone tool to the desired size.
