lets say i want to add 10 pounds of muscle mass how do i know when i have achieved that goal? ??? ??? ??? ???

diet down to single digit and see what's left

First figure your LBM(total wht- pounds of bf) as a starting point, then after a training period figure it again based on on your new weight or bodyfat %.
That should tell you what you've gained.
