Rinse the beef in HOT (150 degrees or more) water before using or use ground turkey breast and add more spice.

Rinsing ground beef puts it in the category of chicken breast in terms of leanness.
I made a HUGE batch of chili last night - very yummy if I may say so ;D
Ground turkey breast
Red, orange and yellow pepper
onion, zuchinni, yellow squash
garlic, olive oil, basil and lots of
diced tomatoes. I also use this
blend of beans - they're great.
The secret seasoning?
6 Guns. It's the best flavor I've found.

Try lean turkey or ground elk in place of beef as well. Chili is a solid bodybuilding food (so long as you don't top it with loads of cheese and wash it down with beer).
