bf measuring scales (like the one you stand on or hold out in front of you) can be thrown off by skin temperature or the amount of water you have in your system...
callipers... the person making the measurements must know what the hell they're doing...
either way CAN be accurate... if done correctly

Too many varibles with the scales. Like you said skin temp, water.

i've seen those things give some bizzare read outs... also i've seen them give me 3 different numbers (2-3% difference!) within a day... stick with calipers... if you can find someone that can do it right

From what I know, water submersion is 100% accurate.
Not 100%, but it's the closest your going to get!

Pretty much correct - it's based on the Archimedes theory of displacement.

I do at least 12 a day. With a good set of calipers and the same person doing it the # come out very close. The reason is you get to know the person. They hit the same spots all the time, and they are very accurate. I've had clients go to a hospital, been dunked and the % #'s are so close that at the most they will vary is a point or 2. That scale that gives a readout with electrical waves has never been on. Like previously said too many variables. The beat way is get the same person, know their credential, and check the new readings against the last. All points measured should correspond with your weight loss/gain and you know if it's muscle or fat. I use Skyndex, they cost almost 500 bucks, so they better be right ;D
