Title: The Best Hard Boiled Eggs!

It took me 15yrs to figure out how to perfect easy peeling HB Eggs.  You all will thank me.

Put 2 dozen "Jumbo" eggs in a big pot.   When the water starts boiling, lower heat to med .  Remove after 15 minutes.

When done, cool each egg in a bowl of Ice water to seperate the membrane from the shell.
Don't just add Ice to the water, it won't work

You can use a big pot, and put like 4-6 eggs in the ice water, add more ice as the water gets warm.

I boil around 2 dozen at a time for about a minute then I pour all of the eggs and the boiling water in the sink.
Peel under cold water while they're hot. No problem.

u do know that they got the egg peeler thing thats pops out d egg out of the shell in like 1 sec!

i personally dont have one because i eat my eggs scrambled but i think they sell those for like 10dollars?

but hell yea! i do know ur icewater works very well!

I've never tried that egg pealer gizmo but I have read that it doesn't work most of the time and just ends up crushing your eggs.

The best method I've found is just like chainsaw said, lots and lots of ice in the water.

they probably didnt cool the eggs properly! lol...

i think even with that egg popper, u still have to cool it~  those fools should have used ice water during their commercial...

or after they are done and slightly cooled, shake them around on a bowl. htey break there shells up and you can generally take the shell off in a couple of pulls

adding a good amount of salt to the water will help pull the shells off easily...the more the better.

After they are at room temperature, you just need to break one of the tips, making sure to remove the thin membrane under the shell.

Well Grandma was right because old eggs have a higher pH than new ones. New eggs have a low Albumen pH and makes the shells stick. When you add either baking soda or salt, it makes the water more alkaline and easier for eggs to peel. Yet, I know a lot of people don't have time to let eggs sit for over a week to make them peel easier.... :)

In a way, but it's trapped between the egg whites and shell so it's miniscule.Their is also negatice and positive charges going but I am not making a big deal about cooking eggs.  The French take fresh eggs, put them in a container with fresh black truffles and the truffles would permeate into the eggs and get a truffle flavor. You to get a better idea on all this you should read Harold McGee's " On Food and Cooking."

eh....he is simply creating a hypertonic solution causing fluids to move from the egg to the outside water.

Yep, 15 years of struggling with those damn eggshells.  My friend was a cook at Paris Las Vegas, and he showed me the icewater trick.  Better late than never I guess.  Now I can wake every 2 hrs in the night and down a couple eggwhites.
