since fat can take 4 to 6 hours to fully digest, i started eating 2 to 3 tablespoons of peanut butter before bed while dieting, no spike in insulin and has some protein, seems to work good when i take a piss in the middle of the night my stomach is not growling like crazy. any thoughts on this?

Too much fat.
try 3-5g of omega3 fatty acids before bed, that's better than peanut butter.
Get fish oil caps, flaxseed oil or hemp oil.

if it fits into your macros, it's fine...I toss in about 20 almonds to my prebed casein shake.....
