One I thought should be in the discussion was the Griffin-Bonner I (final of Ultimate Fighter I). There was not alot of skill, just two guys punching the hell out of each other but there was so much heart and determination on display (not to mention blood) that I had to watch it over and over.
What are some others that should be in the discussion?

Don Fry vs Ken Shamrock, brutal old school slug fest.
Another Fry great is Don vs Yoshihiro Takayama. Absolute brutality.

Thanks. I will look to see if I can purchase those. I am starting a MMA library of DVDs. When I was on vacation a week ago I purchased all of the UFC events they had (59-63?) and the first season of Ultimate Fighter. It made the flight go very quickly.

Also check out Quinton Jackson vs Wanderlei Silva 1 and 2. Silva vs almost anyone is gonna be exciting, hes an executioner.

This fight isn't even close.
I like the Nog/Mirko fight. Fedor/Fujita was good as well. Both of these fights were back and forth affairs, where the loser was actually winning.

The flight would've been a lot quicker if you bought PRIDE dvds instead. I'd return them if you could!

Thanks for the recommendations. I am relatively new to watching these, not a MMA historian at all (yet), so no offense taken.

I really like....
Nog/Sapp
Silva/Hunt

My favorite fight is Arona/Sakuraba. 20 minutes of sheer brutality. Shows that Arona can do more than just lay-and-pray when he wants to. Sakuraba's face afterwards...

Sounds and looks brutal. OK another good one to add to the collection!

Japanese fascination with feeding Ze Saku to fighters who are brazillian, thirty pounds heavier and loaded to the gills on gear makes no sense to me.

hahaha, because it makes great TV. You can't tell me that fight isn't completely entertaining from start to finish. Saku did fine. There aren't too many people who can't eat 100 knees and kicks to the face like that. He would've kept fighting if it wasn't for the fact half of his blood was on the floor.
The best part was when Arona picked him and flipped him on his head like he was a rag doll.

A few classics
Silva/Mezger
Herring/big Nog 1
Tito/Frank Shamrock
Rizzo/Telligman 1
Lawler/Riley
Newton/Sakuraba
Here are a few more recent ones
Shogun/Rogerio
Diaz/Gomi
Fischer/Stout 2
Azeredo/Hansen
Parysian/Sanchez
Huerta/Garcia

Great TV watching a mismatched fighter get slaughtered? I love Saku, and watching fight Wandy 3X, Mirko, Arona were painful, and shortened his career. Japanese want their national heros to beat the evil gaijin, but it's got to be evenly matched. Saku should have stuck to fighting 175-185 fighters in his range instead of fighting the giants. I'm glad he didn't fight Sapp.

Great choices. I would also like to add:
Frank Shamrock/John Lober, both fights. I was at the first one, ringside! ;D
Renzo/Saku
Ice Cold/Chico
Van Arsdale/Wandy
Liddell/Pele

I still, to this day, have never seen the Pele/Liddell fight. I just always assumed that since the fight involved a member of Chuteboxe (at the time) and Chuck Liddell, and the fight didn't end in a KO, the fight probably wasn't exciting. I guess i'll have to find that one.

Headkick knocks down Chack, back and forth, Pele was killing him. Weight difference hurt him.
