i didn't know the size of a potato was standardized, like a 'cup' of rice.

Excuse me, but only the former Vice President Quayle is allowed to spell Potato like you did.   The (e) is used when it is plural...... :-X

Buy a food scale for the taters, read the rice pack if you really want to measure your carbs.

White rice will be higher GI.
