yes, I imagine a cellulose like structure of the protein "fiber". The powder is just a collection of particles after all, not like some fine smoky homogeneous compound or dust for the most part. And inside these particles, who knows what is there. It could very well be a little water without making the particles any wet on the outside. Pure logic.

Usually in WPC you've got 2-3 grams of fat & 2-3 grams of carbs.

The rest is carbs (lactose), fat, mosture, ash (a.k.a. minerals), artificial flavors, additives and presevatives.
The highest concentrated whey protein isolate commercially available is WPI-97 which is 97% protein by weight. I'm aware of no protein on store shelves that uses only WPI-97 entirely, they blend it with less concentrated sources to reduce costs.
