Yikes.  I can tell you what I eat, but not how to cook.  I couldn't cook a pot of minute rice even if I had instructions.   :-\  It's the penance my wife is paying for the years she used me as a guinea pig (before she became a great cook).  :)

Seriously, I do make some stuff, but I'll have to think about it . . . .

One of my Saturday/Sunday morning favorites:

- Cut up garlic, onions, and mushrooms.
- Sautee them in olive oil.
- Use veggie beef or chicken strips, or veggie ground beef.  Thaw in microwave for two minutes.
- Add veggie meat to the garlic, onions, and mushrooms and fry till meat is lightly crisped (my preference). 
- Season with sea salt and seasoning salt.  (Add garlic powder if you don't have fresh garlic.)   
- Warm up tortillas in microwave.
- Put the goulash in the tortillas and add a little lettuce and dressing (your choice). 
- Add Tabasco.
- Fresh fruit afterward.   
- Eat.
- Burp. 
- Rub your bloated tummy. 
- Start thinking about lunch.   :)

i have some.  how vegetarian are you looking to go?  I basically try not to do much vegetarian cooking as i beleive that it is unhuman and I personally don't trust anyone that won't eat animals.  Oh and I have yet to try quinoa that i like.  I especially hate hot quinoa cereal NASTY  :-X
