Few pieces of Beef/veal should be cooked well done. Beef Short Ribs, Lamb Shanks, Osso Bucco, Pot Roast, Brisket, and Corned Beef. Any other cut of meat cooked well done? That means you have some serious issues with your palate. Pork and chicken are different stories.

Second interview with the Food Network May 8th. Chopped pays peanuts and the Chefs on it are a bunch of Monkeys. Went for an interview for Top Chef 6 and they said I have too much experience. Doesn't that sound jerked off?! That show really has gone down the toilet. Season fives Chefs were one step above The Cheese Cake Factory. They're all about selling their sponsors products. Not real cooking. Watch Iron Chef. Real Chefs really cook on that show.

Fish? Raw (sashimi) (baked salmon is okay too)
Shrimp? Boiled
Steak? Grilled
Scallops? Sauteed
Chicken? I don't eat it that much, but when I do, usually grilled, sometimes boiled.

Or, there are some serious questions as to the quality of the meat. I always ask for rare(ish) stuff and when they say they can't, I know the food will be average at best.

I was just in the Caribbean so I was really working with those flavors as of late. Advice for a Beef marinade? Korean Bulgogi never fails.
3 Tbsp chopped garlic (about 2 cloves)
3 Tbsp low sodium soy sauce
2 Tbsp palm sugar or granulated sugar
3 Tbsp Japanese rice wine (mirin)
1 Tbsp sesame oil
3 green onions, finely chopped (including white part)
3 tbsps chopped coriander/cilantro
2 tbsp toasted sesame seeds
1 tsp pepper
1 tsp crushed red chilli flakes
This is just a rough recipe. You can add more or less depending on your taste. Keep acids and salt away from marinades. Acid and salt cook/cure/brine the foods.
Korean food is great and the only good thing about Korea.

Definitely not, raw steak is as mouth watering as it gets-just the thought of it is mouth watering. Goes down easy, sits easy in the stomach.

I like it raw too, but I also like it fried, grilled, etc. I would feel I'm missing out if I only could enjoy one way.

Chicken is actually the best tasting raw meat.

sashimi salmon is great. i like to take soy sauce and rub wasabi paste into it and then dip the sashimi into my sauce.
