Actually the shot of Priest is not from sharpening and contrast. It is from the Lucias filter. You can tell because sharpening and contrast actually introduces artifacts into the image which is why the dorian image you posted has the extra "grainy" look to it. Lucias works the opposite way by taking pixel artifacts out of an image which is why Priests forehead, Platzs pants and the blown out area in the upper left are technically smooth and noise free.

It is a plug in that you pop into photoshop or photo elements. I believe they have a Mac app as well. Pretty powerful tool if used correctly. When I have to make prints over 24x28" I use it. Mainly because it reduces all artifact noise and halos that you normally wouldn't see on smaller prints.
If you look at the original photo when you used the sharpening and contrast tool on that pic of it you did, look at his cheeks and jaw and you will see what looks like the beginning of a 5 o'clock shadow. If you look at the original image, it isn't that prominent. Now look at Priest/Platz, you can't even see pores on their skin because the Lucius all but eliminates it.
You could accomplish the same thing without Lucius by converting the image into Black/White via the channel selection (most likely Green Channel), then minor Level Adjustment, running it through Noise Ninja to remove the noise, and then sharpening about 1/3 of whatever the current level is.
