Postprandial whole-body protein metabolism after a meat meal is influenced by chewing efficiency in elderly subjects1,2,3

Background: The rate of protein digestion affects protein utilization in elderly subjects. Although meat is a widely consumed protein source, little is known of its digestion rate and how it can be affected by the chewing capacity of elderly subjects.

Objectives: We used a [1-13C]leucine balance with a single-meal protocol to assess the absorption rate of meat protein and to estimate the utilization of meat protein in elderly subjects with different chewing efficiency.

Design: Twenty elderly volunteers aged 60–75 y were involved in the study. Ten of them had healthy natural dentition, and the other 10 were edentulous and wore complete dentures. Whole-body fluxes of leucine, before and after the meal (120 g beef meat), were measured with the use of a [1-13C]leucine intravenous infusion.

Results: A rapid increase in plasma aminoacidemia and plasma leucine entry rate was observed after meat intake in dentate subjects. In complete denture wearers the increase in leucine entry rate was delayed (P < 0.05), and the amount of leucine appearing in peripheral blood during the whole postprandial period was lower than in dentate subjects (P < 0.01). Postprandial whole-body protein synthesis was lower in denture wearers than in dentate subjects (30% compared with 48% of leucine intake, respectively; P < 0.05).

Conclusion: Meat proteins could be classified as fast digested proteins. However, this property depends on the chewing capacity of elderly subjects. This study showed that meat protein utilization for protein synthesis can be impaired by a decrease in the chewing efficiency of elderly subjects.

What a dumb-a$$, waste of $$$ study  ::)  What other outcome could they possibly expect  ::)

The digestion process starts in the mouth.  Food is partly broken down by the process of chewing and by the chemical action of saliva.

Some cooll cut and past right there...

I often run my steaks in the food processor tartar style... boil for a couple of secs, let it rest a little, and pass through the food processor with some parsley and spices.

the modern equivalent of pre chewed food from motherbird. Good stuff.

But seriously I see a difference; no gas, no bloat more energy.

Just did it today. then put some Worscshehewhtetshire sauce. lemon or even actual tartar sauce... a good way to eat good meat and give your digestive system a chance...

your talking about eating it like a soup, right ? ill probably put some pappy's in it.

raw meat is much easier to digest and richer in nutrients.

Take a 1-1.5" tick sirloin, boil for a couple of secs, then slice in 1" strips, food processor for 5-6 seconds... enjoy.

That's all well and good if you're "living the dream" .. I prefer to enjoy eating my steaks, rather than something I gotta do to so I can maximize the benefits for bodybuilding.

Actually I started doing it cause I enjoy it.. allways prefered rare steaks... hated cooked meat like roasts and shit..

everybody wins.

I guess I'm not familiar with "ta-tar" style  ???  Your process sounds like baby food  :-\

STEAK TARTAR (Das Rindfleisch Tartar)

1 lb Lean hamburger
1 tspoon mustard
1 onion
1 dill pickle or 1 tblespoon capers
salt, pepper to taste
maybe 1 tspoon paprika
if you have, a dash or two of Maggi {a vegetable spice to be found at supermarket, usually next to mustard, vinegar etc.}

The orinal recipe calls for an egg-yolk. But the sacre of Somenella forbids this.

Mix well wiith fork. Let "steep" for at least an hour.
Serve on buttered crisp sourdow rolls, or toasted buttered bread. Germans LOVE it !
