Steaming emerged as the preferred method of cooking since it clearly resulted in the biggest increase in antioxidant content.

Not surprisingly, peeling apples and cucumber decreased their antioxidant content to 33-66% and 50% of the amount in the unpeeled foods, respectively.

i have heard before that simply rinsing off a vegetable, i forget which one, and you will lose a bit of the B vitamins.

maybe broccoli.  i have heard that boiling broccoli gets rid of a lot of nutrients and steaming it is much better.

Peeling & washing are almost certainly better for you given that whatever antioxidants you may be losing wouldn't be nearly enough to offset the carcinagenic pesticides which you are eliminating.  If you are eating certified organic produce, that's another matter.
