maybe broccoli. i have heard that boiling broccoli gets rid of a lot of nutrients and steaming it is much better.

Peeling & washing are almost certainly better for you given that whatever antioxidants you may be losing wouldn't be nearly enough to offset the carcinagenic pesticides which you are eliminating. If you are eating certified organic produce, that's another matter.
