- Cupful (8 oz) diced onion
- Cupful (8 oz) diced celery

Ingredients (makes 5 or 6 portions)
- 2.2 lbs diced beef
- Cupful (8 oz) diced onion
- Cupful (8 oz) diced celery
- Cupful (8 oz) diced leek
- Cupful (8 oz) diced carrot

- Knob (spoonful) of butter
- 8 ½ cups beef demi-glace (local supermarket)

In a big pot, brown the beef in the butter for about 5 minutes. Add the vegetables and cook it for another 5 minutes. Then, add the mixed herbs, seasonings (salt and pepper) and the demi-glace. Cover it with the lid, and cook it for 90 minutes.

When finished cooking, stir in the Guinness. They also recommend serving this with “champ potato, roast carrot and parsnip.”

How did it turn out?

Demi-glace is not that easy to find (at least not in a regular grocery store) and it can be very expensive.

This recipe sounds just as good and has step-by-step instructions for those who don't know their way around the kitchen.  8)

Sounds fine, nice and easy if you like guinness, otherwise just use some red wine.  Use clarified butter tho or canola oil since butter will burn at a temp required to brown the beef nicely.  I'd use an el-cheapo beef and probably simmer a little longer than 90 mins or until it gets tender.  Just use veal stock (beef stock) and let it reduce or thicken it with a brown roux if required.

Noobs: wash the leeks carefully, and 'seasoning' means salt.

Leek

Demi-glace is a rich reduction of beef or veal broth made from bones into a velvety brown sauce.  Restaurants use it a lot.
