Title: Egg Thread - best way of making them
Post by: calfzilla on January 12, 2010, 06:13:29 AM
Can we get advices on cooking eggs from guys who are in "the know" such as cheftim.
Me I would like to know the best way to make poached eggs, and also how is it best to make eggs over easy or medium without breaking the egg?  Is there a way to cook them without having to flip?

When doing over easy eggs aka flipping them cook low heat if you blast them outa the gate the bottom cooks to fast not giving the top time to cook enough to flip without breaking the yolk, also you will over cook the bottom. for poached eggs its the same concept as steaming veggies there are poached egg pans for sale..

To make poached eggs bring water in a pan to a boil and then turn down to a low boil or simmer.  You can add a splash of vinegar to the water if you want.  Then carefully crack the eggs into the water discarding the shells.  Let them boil/simmer until desired doneness and carefully remove them from the water w/a slotted spoon.

I use one of these microwave egg poacher thingys when I'm in a hurry.  You need to learn to control your microwave power level so they don't "explode", but they're usually done in about a minute ten.  Admittedly, they don't taste like "real poached eggs", but they're fine when you're in a hurry.

I thaught of chaos for some reason when i saw the thread.

I just had a nice meal:

Take a big paprika and cut trough middle, cut to small peaces one half and bake it for 3 min flipping, while you put 3 whole eggs and 4 eggwhites in a bowl, by then paprika should be nicely baked then mix it all together.

I also like to bake eggs with that white cheese, ofcourse first put the sheese in a pan for a little then add the eggs. livin the life

I still choke them down b/c I don't really know what else to eat in the morning that is a good protein source (chicken doesn't really taste good at 7am).  I'd love to find something else.

1. hard boil them - let them cool off
2. cut them in half
3. take the yolk - crumble into mayonaise with dijon mustard and parsley
4. put mayonaise mix back in the hole
5. top with a stuffed green olive
6. serve cold

Blend them with milk
and vanilla essence.

Blend them well, otherwise
you will get eggwires, this
is a phenomena where the
part of the raw egg allready
in your stomach is still connected
the the bit in your mouth via
a strand. Sometimes this will
induce involuntary vomitting.
