Cranberry Sauce with Port and Dried Figs Bon Appétit | November 2001
The dried figs add a chewy sweetness to this delicious sauce.
Yield: Makes about 3 1/2 cups
ingredients
1 2/3 cups ruby Port
1/4 cup balsamic vinegar
1/4 cup (packed) golden brown sugar
8 dried black Mission figs, stemmed, chopped
1 6-inch-long sprig fresh rosemary
1/4 teaspoon ground black pepper
1 12-ounce bag fresh cranberries
3/4 cup sugar
preparation
Combine first 6 ingredients in medium saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat to low and simmer 10 minutes. Discard rosemary. Mix in cranberries and 3/4 cup sugar. Cook over medium heat until liquid is slightly reduced and berries burst, stirring occasionally, about 6 minutes. Cool. Transfer sauce to bowl; chill until cold. (Cranberry sauce can be prepared 1 week ahead. Cover and keep refrigerated.)

I'm not a fan of the dried figs however i would use fresh ones. Slightly burr mix it to get some texture difference and thickining. port,balsamic and figs is a good combo. I would be careful with what port you get as they can be dry or semi-dry and sometimes a bit sweet especially since you have brown sugar and the other fruit. Maybe add only part of the sugar at first and see how it goes.
I actually use orange and lemon in my cranberry sauce and will add a splash of grand marnier. This recipe sounds good, though the amount of port seems a bit much. again it depends on how sweet it is and how sweet you like it.

my turkey day menu so far goes like this:
Cheese and fruit course: Manchego, herbed goat cheese, baby blue, and a brie. caramelized figs, strawberries and grapes
Smoked salmon tray with diced red onion, chopped egg, capers and olive oil
Salad: endive and mesculin with spiced almonds and mustard vinaigrette
Stuffing/dressing: mixed between french and cornbread with herbs and roasted pine nuts
Brined turkey: cavity stuffed with lemon, leeks, carrots, celery, garlic, onion and might throw in an apple
Cranberry sauce: not sure how I will make it this year
Roasted garlic mashed potatoes
French green beans sauteed with olive oil cracked pepper and sea salt
Dessert will probably be pumpkin pie, apple pie, bread pudding. Homemade whipped cream.
I'm skipping the soup course this year. Last year I did a pumpkin soup with a cinnamon and nutmeg spiced creme fraiche and garnised with micro-greens. I've done chestnut soup and butternut squash and red bell pepper before too. This year it's in the 70's here so not really soup kind of weather. I'll do a soup for Christmas. Not sure which yet. Any ideas? Maybe a carrot soup or a bisque.

I thought it sounded awfully sweet too. I made it last night and cut back on the port by 1/3 C and sugars by about 1/4 C. It wasn't thickening up enough, so I ended up adding the rest of the sugar. Or just get another bag of cranberries and cook those up in some juice and mix the two? Or just get a can of the good 'ol Ocean Spray and mix? lol ;)

I'm just sticking with the usual suspects this year. No appetizers, no salad, just the meal - don't wanna hear any kids saying "ewww I don't like that". okay - maybe just some cheese and fruit.
Turkey on the grill (stuffed with oranges, lemon, onion, herbs)
Apple-Onion stuffin muffins - Rachel Ray style
Roasted sweet potato chunks - 3 different varieties (hopefully, they'll cook up in various colors)

Or just get another bag of cranberries and cook those up in some juice and mix the two? Or just get a can of the good 'ol Ocean Spray and mix? lol ;)
Good call - I did that. I guess I expected the berries to explode and break down on their own.
the berries will eventually blow up and release the pectin, it sometimes takes a while though. Lemon juice will up the acidity so it could help

might not add sugar to the greeen beans. You have some other sweet flavors going on in the menu. Maybe make a balsamic reduction and give the beans a little drizzle. It'll be somewhat sweet and a tart. Onions though i like to add. I will sometimes make the beans with toasted sesame seeds and a pinch of citrus dust

came out well. However this year i have no pics to share. I went downstairs to tget the camera and when i got back upstairs they already dug into the trays. >:(
I take pics of everything so the folowing year I can make adjustments to the recipes depending on looks/presentation ideas etc.
