I'm on my 3rd attempt; beef always comes out tender but dry and grayish instead of pink and spam like... .
Any advice on mode of cooking, temperature., recipe?
Too bad OKumi isn't around anymore.. :-X

Beef and corn balls
Corned beef 1 can
Cream cheese softened
Cheddar cheese 2 cups, shredded
Prepared horseradish 2tbsp
Worcestershire sauce 11/2 tsp
Prepared mustard 11/2 tsp
Lemon juice 3 tbsp
Sweet pickle relish ¾ cup
In a mixing bowl, blend corned beef and cheddar cheese, Worcestershire sauce, mustard, horseradish, cream cheese, lemon juice and sweet pickle relish. With an electric blender, blend the ingredients until you get a smooth mixture. Shape the mixture into balls. Refrigerate, allow it to set well and serve.

Cooking issues.... not sure how to set the dutch oven to prevent it... I think it's need to marinate longer... let's give another shot..

Well the gey guy with the glasses on food network says you gotta let it sit in "brine" for a couple of days...

make it in a slow cooker/crock pot

I just pulled it out of the box... thank you! ;D
I'm more of a steak tartar kinda guy... slowly cooked meat is all new to me.. looks like the "brine" is just for "curing" it's not a marinade, I'll let the brisk sit in there for a couple of hours..

when I make it (maybe a few times a year) it's always on low for something like 8 hours.
Just start it in the morning and it's done by dinner

What is your process? What cut of meat are you using? You can buy a corned brisket, which will save the trouble of brining.
Maybe Cheftim or Migs will chime in...

the corned beef your buying at the store has already been thru the brineing process. the guy on that video ( i didnt watch it), most likely was brining a beef brisket therefore turning it into corned beef
u just throw that bad boy in a pot of boiling hot water all fuckin day and BAM! its done! theres more to it, but its pretty simple.
