I think he's referring to how you handle the chicken ~ ie; handwashing so you don't contaminate everything you touch, such as the pepper shaker ;) Since you are such a big fan of pepper, you should try a fresh peppercorn grinder. Some of the spice companies are selling them as part of their packaging.
