Title: PIZZA Question. Are you one of those weirdos?
Post by: The True Adonis on September 07, 2011, 04:48:34 PM
 ???  ???  ???

Can someone help answer this for me.  Why do some people eat Pizza and when they get to the crust, they don`t eat it and pile it up on the plate.  What is the reasoning behind this?

because they're so disgusting that they refuse to eat the crust because there's no sauce / ingredients over it.

some say it's because the edges hit the oven (in case of a brick oven, wouldn't that make it taste better) and they say the "dirt" gets on there (as if hundreds of degress won't take care of that).

it was that much of an issue that dominos or pizza hut or someone has the "stuffed crust pizza" where they put cheese in it just so the fatties can eat it.

it's almost always the "fats" who won't eat the crust.

i am the kind of weirdo that asks for extra pizza sauce in a cup so that i can dip my pizza crust into it when i get to it

when im not feeling in the mood to eat lots of bread... i choose a think crust pizza instead

Because a thicker crust will fill you up too fast, taking up room where more cheese can go.

Agreed....I like the crust, it's a crisp and refreshing finish to the slice. A bigger problem with pizza is chefs that don't have the balls to make it taste like something, and they just pump out generic bullshit that tastes like some just spread tomato paste on some dough.

Make a statement..."this is what MY pizza tastes like"

Exactly!

The people who don`t eat the crust don`t even realize that what they are throwing away is usually a several day cold fermented crust of high grade Double 0 flour that is perfection on the palate.  (at least a proper pizza should be this).

Why don`t these people just order cheese and pepperoni in a bowl with some ketchup instead of ruining our pizza.

crust = boring & the edge..... its not the pizza its " the crust "........... u see whats happenin here?

stuffed = different story though ....combined with a dip......or even a half decent crust with a dip, providing there is a scarce amount of pizza on the go!

It's very common here in the North East. It was always courious to me, as I find the crust the best part. Most say they don't like it because it's too doughy. I've also found it's common with foreigners.

Italians usually also make bread out of the same dough, tastes amazing.

I'll tell you something repulsive.

My ex girlfriend's uncle would eat a LARGE pizza all by himself.
He would take half a pound of butter and spread it on the whole pizza, and then he would fold up the pizza in two and eat it like a sandwich

most disgusting fucking thing I have ever seen  ;D

I am not a big pizza eater, never was.

Same with pancake, people are big on pancake but I never really craved those.

I prefer hot-dogs, hamburgers, corn-dogs, nachos as "junk" food

We actually made one yesterday from dough I am cold Fermenting still in the Fridge.  I also made the sauce with grated onion, Crushed San Marzano`s, Garlic, Olive Oil, Basil, and the taboo 1/4 tsp of Sugar.

I still have enough for one more crust (I doubled the recipe to make 4 crusts) but I am going to let it ferment 2-3 more days.  We ordered a pizza today precisely because we did not feel like cooking, although later we will make some Strawberry smoothies.

I can`t tell you how much I have read on Pizza Making.  I use Double 0 Flour and have even tweaked my oven to make it go beyond the 500 degrees in order to experiment with high heat crusts.  I have also used the Skillet/Broiler method and the Reverse Skillet/Broiler method and we also make Pan Pizzas all the time soaked in Olive Oil.

One thing I have spent a lot of time on is Pizza.  I do like a brick oven now and then, which is what the place where I get it has, but I think our results can yield better as we have control over everything including what type of cheeses etc...

I am a daily reader of Slice on Serious Eats.  Guilty.

The longer you ferment the crust in the Fridge, the more flavor it develops as it cold Ferments.

I also add 1 12oz bottle of beer to each crust for even more flavor.  I have been using Red Stripe so far and seem to get the best results with it.  I may try something darker soon.

I got the beer idea from King Arthur.  I am not nearly as obsessed as some are, especially on Slice.  I read of them constructing Brick Ovens in their backyard just to make Pizza.

I also like to try different regional Pizzas.  Next on my Pizza making list is a New England White Sauce Pizza and of course, a Chicago Deep Dish Pizza filled with Butter crust.  I have a list of recipes on my fridge to make, but I have gotten a bit lazy ever since using a Sous Vide machine.  Once bodybuilders discover how to Sous Vide, they will be in heaven.

I do find that somewhat amazing just how different other countries Food Chains are despite being the same company.  That doesn`t look like the Pizza Huts in the USA.  I wish it did though.  I am going to translate that site and see what they have there.

I thought the review by user "Athanasius" on Amazon was interesting.  Part of his review reads:

Let me first address the "scientific" issue. Previous standards for popular "scientific" culinary guides have been set by Harold McGee's "On Food and Cooking" and some other lesser titles. Aside from the descriptions of "modern" techniques, the scientific material in this book isn't a significant improvement over McGee's book, so first buy McGee's book for 1/20th of the price or so, and then maybe consider this book.

What this book does have is lots of photos, many of which are awesome and even "artistic." This makes a great coffee-table book. But only a fraction of the photos that take up so much space in this book are actually useful.

Since you've mentioned McGee's book before on this forum, I assume you've read it.  I'd be wary of a purchase if I were you, although the pictures certainly are beautiful!

I also find it repulsive to stare at a plate full of bite Marked unfinished crusts as if there were some sort of giant Rodent mingling about.

I'm with you. I wouldn't go as far as saying "replusive" ( you have very tender sensibilities, Apenis,  which is why you are such a fag) but I do find it a bit unseemly. Just kind of tacky. If it was me I'd cover it with a napkin but I a very vigilant crust eater and will not take another slice until the present is fully consumed. I like the guy's idea of dipping it in pizza sauce. Papa John's has those garlic butter sauce that they include with their bread sticks. That would be a great dipping sauce as as well. In fact, I asked them why they don't include the garlic/butter dipping sauce with their thin crust pizza and they actually told me because there's really not a lot of crust with the thin to dip.

I once asked a friend why he doesn't eat the crust. He says, similar to a previous poster, that it takes up space that could and should be use for the parts with the toppings. If he still wants to eat more after whoofing down all topped pizza parts then he'll go back and forage on the scraps.

I think that is a perfectly reasoned and well thought out strategy for eating pizza to maximize value, pleasure and satiation.

Good thread, BTW. These things need to be discussed.

A lot of times, if not most of the times, those mom and pop, hole in the places, make the best pizza then the major chains. I figure they put more personal care into it then some college age kid who really doesn't give a rat's ass.

The chains are nothing but an excuse to get a pizza delivered to your home, at least here in Japan.

I have 3-4 excellent pizza places nearby, some run by Italians as well, but they all don't deliver. It's not that common in Japan, only the chains do it.

Yes.  Both of us Self-Employed from home, operating a small business.   We also have zero debt obligations.

Would various pictures suffice?

Well, the offer is very tempting. Very tempting indeed. But at this point I feel it is best to just let go. In the past, I use to try to drag things out. Hoping against hope that one could in a sense revive the dead. But with age, experience, and an increasing sense of bitterness I tend to go through life with more of a sense of stoic resignation. Think of me as sort of a modern day Diogenes without the beard and with a much better tan.

I so need to do that. I'd take a 50% cut in pay just to do things on my schedule. That's the only thing I give props to Goodrum for. That he got out of the rat race and began working for himself. Anybody that can support themselves, whatever their life style is, by being self-employed gets my respect.

What kind of biz are you in or is that too personal? I bet it's something faggy like home made cookies or fancy cook ware.

Slightly off topic but probably the main reason I cannot stomach going to restaurants is precisely because people leave half finished meals on their plates. I was raised to eat everything you were given (largely because that I was raised to appreciate a decent home cooked meal and what there was was all there was). I just can't handle watching people buy a meal and then eat bits of it. If you order something off the menu - tailor it to suit your appetite or likes/dislikes. I can't stand wastage of food. hey - if the food is crap then sure, don't eat it, but then again - if you are at a restaurant and the food is crap send it back, get a refund or something - don't just leave your scraps all over the show.

Gayer than baking a Blackberry Jam Cake just because you want to get rid of the Buttermilk in the Fridge in order to try a new brand.

True Adonis - since you are there right now - me not being in the US - can you suggest a good recipe for home cooked white chocloate and raspberry cookies. i have a recipe for (is it NeimanMarcus ) white chocloate and raspberry muffins but would like to attempt a cookie now. Looking for something fairly general but proven - I don't have access to a lot of the US domiciled  ingredients so will probably have to do some educated substitution.
Cheers if you can assist.

Whats your pizza place in Phoenix?  I loved Patsy Grimaldi's (Sp?)....the one in old town always tasted better than the one down in Gilbert/Chandler

I grew up in Jersey so I'm ruined for pizza.  Good pizza is still good, but it's just not the same.  Yes, I eat the crust if it's worth eating.  If it's not, the whole thing is pretty ordinary anyway.

I doubt most places would use 00, TA.  Even lots of the mom & pop italiano joints probably order mass produced frozen dough to save on labour and equipment, or use a just-add-water premix if they've got a Hobart out the back.

It's very common here in the North East. It was always courious to me, as I find the crust the best part. Most say they don't like it because it's too doughy. I've also found it's common with foreigners.

a "doughy" crust is not a good pizza crust, it is bread. Switch pizza joints immediately.

My ex girlfriend's uncle would eat a LARGE pizza all by himself.

next time, try Lou Malnati's, and have him take you to Pizzeria Uno, where they have single serving pizzas that will have you roaring in extacy , impregnating the helpless women around you via air transfer of sperm.

Uno's(original location) - Best DD in town
Lou Malnati's - Second best DD in town
Lou Malnati's - Best thin crust in town
Bertolli's - Close second on thin crust
Salerno's - Third best thin crust ( needs to have extra sauce and extra, extra, extra well done)

I make my own dough from a classic Neopolitan sytle pizzeria where I used to work in high school.
I make my pizzas on the famous Big Green Egg XL at approximately 650 degrees.  This past summer, I made a modified Margarita pizza with roasted garlic, kalamata olices, fresh Jersey tomatoes, Celtic sea salt, fresh ground black pepper, and some EVOO.  Wonderful.
I then added some fresh corn to the topping(s), which came out quite good.
Yet another concoction was adding prosciutto for just long enough so that it is wilted (about one minute).

Adonis, when it comes to food, I know how to cook it.
The best steak I have eaten in my life was recently done on my green egg.
I got that bastard up to 700 degrees, with my 15 inch cast iron skillet inside that has been routinely seasoned with lard (better than any teflon leaching pan).
I had 2 dry aged prime ribeyes cut to 1 3/4 inch thick.
I brushed the steaks with EVOO, and rubbed them with very coarse ground black pepper (actually rolled with a rolling pin while in a Ziploc--an old chef showed me this years ago while I was bartending), and coarse Celtic sea salt.
Seared steaks for 3 minutes per side in the skillet.  Removed steaks from skillet and let roast over the charcoal for 4 1/2 minutes with the vents shut down.  Meat came out perfectly medium rare to medium.  For ribeyes I actually like the meat a little more done than normal, but never more than medium, this is to carmelize all of that wonderful beef fat (tallow).
If this were a strip steak or a porterhouse, I like it rare to medium rare.

For traditional Neapolitan Pizza,

"Keste" located on Bleeker Street NYC is hands down the best.

Adonis, a Regular oven doesn't come close to the heat required to properly cook pizza, hence the enthusiasts building brick or wood fire ovens in the their backyards.

A traditional thin crust pizza is cooked in 2-3 minutes.

Best Pizza so far posted.  I know, I just find them silly for spending so much time and effort for a one-trick pony.  Also, they then begin to sexualize the Pizza and are obsessed with the "upskirt" shots and will take a nibble here, take a picture, another, another picture.  Its a strange sub-culture, one that breeds a certain Shit-Brainedness all to itself.  Its amusing.

???  ???  ???

Can someone help answer this for me.  Why do some people eat Pizza and when they get to the crust, they don`t eat it and pile it up on the plate.  What is the reasoning behind this?

Haha, what a great topic. ;D

Im actually one of those that sometimes dont eat the crust, allthough I have been doing it more frequently these days (probably because Im on a diet and Im just that hungry!). But honestly its just a habit of mine. When I get to the crust, I dont see no point eating it as its just extra empty calories and zero nutrition. And so I feel more satisfied by leaving the crust because there is no need to bring extra fuel to the fire. I mean come on, we are bodybuilders right? Its only natural to have these obsessions. ;D

Thats simply not true regarding the Nutrition part.  The crust is filled with Nutrients and Protein.

Never been to Joe's....never was a big fan of NYPD.  Every time I have had it the spices overpowered everything...or the crust was meh.  I do like an Oregeno's in Mesa....for some reason they do theirs better than others.  I have to go to Florentinos when I go back....there is a place in Glendale (I think) that was rated very good....can't for the life of me remember what it was though.

Worst pizza by far....Bostons near ASU

La Famiglia in Gilbert is good too, as far as going to Glendale....Fuck that noise. Westside is meth central  :P

Not all pizza (or pizza crust) is created equal.  If the pizza is really good, I will eat the crust.  if not, I will stop where sauce ends.  Sometimes, the crust is hard, overcooked, or burned.  Again, not all pizza is created equal.
