When I grill a steak I think the best technique is to uses the hottest temperature that cooks the steak properly (e.g. medium, medium-rate, etc.) without charring the outside.  I think the same advice holds for striking your wife if you replace "grill/cook" with "slap" and "steak" with "woman".
