Watching food channel, they say to soak chicken in brine. I did..and thought fried chicken tasted like shit. One thing I'll give to Get Big...I see posts every once in awhile with some kick ass food ideas...
Since chicken is pretty much a bodybuilding staple (and, thus, this thread is bodybuilding related) does anyone have any kick ass fried chicken recipes?

Look up Alton Brown's recipe soaked in buttermilk.. Can't go wrong with any of his recipes.

Look up Alton Brown's recipe soaked in buttermilk.. Can't go wrong with any of his recipes.
If you can catch any of his "Good Eats" episodes on chicken, he explains the reasoning behind his cooking process. He's goofy, but knows his shit.

butter milk seems to be the key. and pressure frying seems to make a huge difference.
had this recipe bookmarked since forever. not got around to trying it out yet though :'(

You don't have to soak the chicken in the buttermilk overnight but it is the key to great southern fried chicken recipe. It adds so much flavor and makes the chicken extremely moist and tender.

I think that might be for a brined roasted chicken or turkey (whole) ??? not for "fried' parts.

Brining is necessary. You did it wrong or used a garbage recipe. Use this, best ever.
Nashville Fried Chicken
Serves 4 to 6
Chicken quarters take longer to cook than smaller pieces. To ensure that the exterior doesn't burn before the inside cooks through, keep the oil temperature between 300 and 325 degrees while the chicken is frying. For an extra-hot version, see related recipe.
Ingredients BRINE
2 quarts water
1/2 cup hot sauce
1/2 cup salt
1/2 cup sugar
1 (3 1/2-to 4-pound) whole chicken, quartered (see note)
COATING
3 quarts peanut or vegetable oil
1 tablespoon cayenne pepper
1/2 teaspoon paprika
1 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon sugar
2 cups all-purpose flour
1/2 teaspoon pepper
Instructions
1. BRINE CHICKEN Whisk water, hot sauce, salt, and sugar in large bowl until salt and sugar dissolve. Add chicken and refrigerate, covered, for 30 minutes or up to 1 hour.
2. BLOOM SPICES Heat 3 tablespoons oil in small saucepan over medium heat until shimmering. Add cayenne, paprika, ½ teaspoon salt, garlic powder, and sugar and cook until fragrant, about 30 seconds. Transfer to small bowl.
3. DREDGE Remove chicken from refrigerator and pour off brine. Combine flour, ½ teaspoon salt, and pepper in large bowl. Dredge chicken pieces 2 at a time in flour mixture. Shake excess flour from chicken and transfer to wire rack. (Do not discard seasoned flour.)
4. FRY AND BRUSH Adjust oven rack to middle position and heat oven to 200 degrees. Heat remaining oil in large Dutch oven over medium-high heat to 350 degrees. Return chicken pieces to flour mixture and turn to coat. Fry half of chicken, adjusting burner as necessary to maintain oil temperature between 300 and 325 degrees, until deep golden brown and white meat registers 160 degrees (175 degrees for dark meat), 20 to 25 minutes. Drain chicken on clean wire rack set inside rimmed baking sheet and place in oven. Bring oil back to 350 degrees and repeat with remaining chicken. Stir spicy oil mixture to recombine and brush over both sides of chicken. Serve on white bread with pickles.

You can make a substitute with vinegar or lemon juice and milk (look up the portions) I've done it for banana bread. It would probably work for this too. Try it. A heavy cast iron skillet is key as well as the type of oil. I'm sure Alton has a youtube demo.

Yeah I was actually trying to find a place here that sells raw milk, so that I can make my own fresh cheese, Quark (look it up if you don't know it, it's the best ever) or yoghurt.
But trying to find raw milk in Japan is harder than importing cheese by yourself, LOL.

Fried Chicken is best Deep Fried in a Dutch Oven (using 3 quarts of oil) with a Temperature gauge on hand. Temperature is the most important thing and if you get it wrong, the coating will never adhere correctly or you will be cooking at too low a temperature and thus end up with greasy chicken.

I eat at a chicken & waffles place every other week that has really good fried chicken. It's a strange combination, but it works well.
