Good luck doesn't seem appropriate and "thinking of you" sounds a bit cliche'...
Any other words of encouragement before going under the knife?

I say I will be/am praying for them and their surgical staff, and for everything to go well (I know saying you'll pray won't apply to many though).  Also, you can specifically ask what they think they may need help with afterward during recovery..meals/laundry/etc.
