It's not just better foods, it's also that these guys were far more physical at work and play than most people are today. Hours of manual labor + hours of physical hobbies will lean you out in a hurry. Also those guys were small, most of the ripped guys in those photos, minus Sandow and Saxon, were #150 - 180 usually.
