my favourite food.

my dad and i go once a week to this little place thats makes homemade pizza- they are a little family restaurant owned for 30 years and make their dough fresh every morning. best pizza i ever ate. im going to get one tomorrow now. pics to follow. :D

I have been all over the world and the very best pizza EVER in the history of things that pass themselves off as pizza is in Bergen, Norway.  (will have to get the menu when I am home as I can't remember the name of it now).  It is located across the plaza from the TGIFs there.  (yeah... they have one there.)

Over 200 toppings, nearly everything you can think of.  Duck, caviar, vension, etc....  But what makes it so good is each ingredient you pick is prepared separately.  They don't have pre cooked items that they throw on the pie and then stick in the oven for the crust to harden and cheese melt.   Instead they cook each one separately and independently while the crust slow bakes and then add them to the pizza in the order of prep.  So when you get it the meatballs or ground beef or sirlion tips or chicken are hot but yet the raw onions or basil or such is still a bit cool and crisp.  

I don't eat pizza much in the States (about once every 3-4 months) but when I am there, I eat at that place for lunch every day.  It isn't cheap either.  A medium size with 3 basic toppings for two people with a draft beer or glass of wine each is going to run you about $60.

Do a search Romanian Hobblestick.  I already have posted my methods which includes a complete recipe.

You won`t make anything because you routinely just eat out of the dumpster anyways.  Why should I waste my time?

I've had Giordano's and Lou Malnati's in Chicago. Very good, but I like a traditional pie like Adonis' better than a Chicago deep dish.

I loved going to Chicago on business trips, filling my face on the company dime.  Some of my fav's for pizza were Grimaldi's, Uno's and Lou Malnati's.    Awesome deep dish pizza.

Pizza fired in a ceramic oven tastes phenomenal. You can throw any piece of shit dough in there, slide it around and out comes a fabulous pizza. When you try a properly fired pizza it makes everything else seem on a lower level, like trying to cook pasta or rice in a microwave versus doing it properly.

Simple techniques, simply ingredients, just done PROPERLY. Makes a world of difference. I don't have a stone to throw in the oven but I've been reading lots of recipes on Reddit's pizza subreddit and I'm thinking of trying a few of them. Pretty hard to fuck up a pizza but when you make one properly, it's like heaven.

Have you ever tried cooking with MSG from Ajinomoto? I know they're not entirely the same but I sometimes throw it in dishes.

People freak out over MSG but even when Asian restaurants advertise their foods as being MSG free, they use lots of foods with glutamic acid like fish sauce, oyster sauce, obviously seaweeds and mushrooms. Beef and cheeses like parm or emmantal are loaded with it too. I kind of chuckle when people swear off MSG but turn around and eat a ton of glutamate loaded foods. Smug, dumb fuckers.

Its the cold ferment and cheese to crust ratio. Its a great pizza to replicate and is quite easy to do so.

Its the ABSOLUTE best and is what you see in the picture I posted.  CI recipes are by far the best.  I have a subscription to both Cooks Country and Cooks Illustrated and its where I cook from most of the time.  Their recipes cannot be beat and all of them are better than what you can get in any restaurant.

Bro, hit up the local Asian store for that stuff. It's so cheap! And it does get a bad wrap... I used to think it was a migraine trigger for me but it was just the shitty-fake Chinese food I was eating. Did a few tests myself and I get zero migraines or headaches from it. And then a two minute Google search showed me how many common foods have glutamines so that totally killed the myth for me. I should have known the masses would be wrong about it, just like they are with everything else. :-X

Damn, fish sauce in chili, eh? Even I haven't tried that before! I'll make a pot next week and see how it goes. :o

Brooklyn Water. hah.

Its the cold ferment and cheese to crust ratio. Its a great pizza to replicate and is quite easy to do so.




Grimaldi's pizza in Brooklyn was pretty tasty.   Never tried Di Fara.   I usually get to NYC about 3 or 4 times a year on business.  Will see if I can get to Brooklyn to try Di Fara next time I'm in NYC.

Its the ABSOLUTE best and is what you see in the picture I posted.  CI recipes are by far the best.  I have a subscription to both Cooks Country and Cooks Illustrated and its where I cook from most of the time.  Their recipes cannot be beat and all of them are better than what you can get in any restaurant.

i got one of their reference cookbooks ("the cook's illustrated cookbook") and their "the science of good cooking" partly because i recognized you post a lot of their recipes

solid stuff so far.  apparently my mom uses their crust recipes for her apple pie... and i always wondered why it was so much better than all her other cooking ;D

I just pulled a pizza out of the oven.  This one was a Pan Pizza.  I usually make a few lbs of dough, let it cold ferment and then bake one or two a day for a few days.  I don`t think I can ever get tired of pizza.
