I like the thigh meat too. If Brest meat is even slightly over cooked it becomes too dry. If you slightly over cook the thigh meat, it will not have the dryness problem.

yeah, boneless skinless thighs have negligible fat, something like 2 or 3 grams per serving i think
and what's wrong with fat anyway ::)

i mostly use thighs these days as well
breasts are easier and faster to prep for the most part, and the taste is indistinguishable in some recipes. for example, in stew / soup / curry the taste will be practically no different, and texture only minimally. would rather use breast in these cases.

Try this: my favorite Chicken Thighs "Chicken Curry w/Coconut Milk"
4 boneless chicken thighs
Oil for frying
Salt to taste (after!)
1 cup of sliced onions
1 potato
5 cloves of garlic
1 can of coconut milk (13.5 oz)
2 tablespoons of curry powder
Cook potato and onion first in oil, add everything else when mostly cooked (as potato takes longer)
Sautee for 10 min, serve with fresh hot rice!!

Tell me bro, have you ever tried something called "steak"? It's cooked up dead cow (I know, it sounds gross but bear with me) and it tastes amazing

Chicken thighs marinated in Franks hot sauce with a dash of Cajun Seasoning on tip is delicious.

I hated chicken thighs until I put them in a home made red sauce with onions, cilantro, garlic and spices over pasta. The meat falls off the bone when cooked together slowly. I get the thighs pre cooked at Costco. It's a giant pack really cheap.
