There are a ton of videos like this on youtube. I find it fascinating to watch someone who has become so skilled at a particular task that they are almost robotic. Even when I stop at a diner and I see the fry cook taking orders and cooking with precision, I find it impressive.
This butcher moves with scary speed and precision. One wrong move and he's missing a digit. I don't think I'd be up for this. What do you think of his watch, watchheads?
This lady is really methodical in her rice paper production.
This waiter is a master steak carver. He slices the steak perfectly and even uses his knives to scoop up the juice.

Yeah, I was inadvertently holding my breath the first time I saw that vid. No matter how skilled you are, there is always room for human error. I don't think I'd be up to that. There are a few times in the video where some chicken pieces don't move forward and just lay around the blade of the bandsaw. I know i'd be tempted to knock them out of the way and bye-bye index finger. :'(

Knew this guy who grew up in a butcher shop. One day his mind must have slip and he sliced his hand cleanly off. Poor guy. Just one brain fart and now he can't ever clap again.

Vaguely related... while growing up, a friend's parents had collectors samurai swords in their den and he cut off two of his younger brother's fingers. :'( He never seemed that broken up over it.

Ever see the Chinese noodle makers? Like magic. For a minute just looks like a big loop of dough and then bam, it's a thousand noodles. Pretty amazing at how they do it.

When I was 16 and worked at a restaurant , I would make 5oz crab cakes and 8oz burgers and wouldn't even have to weigh them once I got use to it! :o

Sorry to be an arse but the guy in the first video is food processing, not butchering. Ask him what parts he is removing and which are for sale to customer...
I go to a proper butcher for my meat. They take carcass ( pork, pig, lamb, chicken) and cut it in front of you and lay out all pieces (hearts, kidneys, gizzards) etc sell well here due to popularity of Masterchef and asians/other people who know how to slow cook food). They don't fuck it through a razor grinder and call themselves butchers.
Anyway... went to a Thai restaurant before and the chef would slice food with a fillet using metal spatula and jump it onto your plate. That was pretty skilled. I will cogitate the issue and come back with a good response.

That'd be pretty bad. The only worse case scenario I can think of would be getting your picture taken with the 2016 Mr. O and not being able to do the 'side flex, fist clenched' pose or handshake...
