Canada does it too. I believe that the reasoning is because knowing how the rest of the country is already voting may influence the outcome. For example, someone on the West coast may change their vote if they know the results of the East coast election. Although in Canada it makes more sense because the election crosses multiple time zones. Counting isn't reported on until the West coast is done voting.
