You can't totally prevent getting the flu, but doing these things helps a lot:
1. Use alcohol wipes after touching anything, especially door handles and gas pumps.
2. Stay away from crowds and public places.
3. Don't eat at restaurants during flu season. So many food handlers come to work sick because they don't have sick days, especially fast food workers.

I'm a shift leader at McDonald's (FINALLY, it only took 10 years of dedication to the company before they realized what a valuable asset I am. I told them if I wasn't promoted to full time I'd leave) so I do have 3 three sick days to use every year but obviously most of my staff isn't so lucky.
I use the 3 cough rule. If you cough 3 times in an hour while preparing food I'll recommend the manager send you home (I can't officially make that call, yet). Obviously if someone sneezes twice (without coughing) while having a runny nose in that same time frame I suggest they go home.
If you guys knew what goes on in the back you'd likely never eat McDonald's again.

Others can answer but unless you have the time built up to miss work our supplemental disability insurance (for time missed longer than a month) you won't get paid. Union work is the same deal, your work for the company not the union.
