I think the US has too many internal problems at the moment and not enough bandwidth or public support to stage a war against China in order to keep a "breakaway province" away from their absolute control.
The major interest I think the USA can have in keeping Taiwan independent is the geographical location Taiwan has to mainland China and also the fact that Taiwan produces much of the world's supply of computer chips.

China wants Taiwan because of TSMC, Taiwan Semiconductor Manufacturing Company. They, in conjunction with their partners in the USA and Europe, have pioneered the latest generation of chips capable of making supercomputers beyond anything anyone has ever attained.
The tech to do this is based on next generation photolithography, a tech that China is forbidden to have by trade embargos. If China gets TSMC it would be like China taking over Intel.
Letting China take over Taiwan is not an option. We will be dragged into a conflict with China.

From a sheer military weaponry stance, sure, the US can outgun China in a war of lasts months. The other issues I see on hand is that if the USA goes to war with China, you would have Russia, and North Korea teaming up with China against the USA. It would be too damn risky of military venture given where Taiwan sits. Moreover, I think that type of war, at this particular time in history, would completely cripple the USA economically.

When evaluated as an individual trade partner, yes, the USA is China's largest trade partner and even with that statement being said, there is a huge caveat to the overall disadvantage the USA has in comparison to China by way of international trade.
Last year, the total value of bilateral trade between the two countries was $737.1 billion, with U.S. imports from China valued at $557.9 billion and U.S. exports to China valued at $179.3 billion. Most of the largest institutional firms in Wall Street are predicting that the new empire that will be taking over as the world's financial superpower is most likely going to be China. I know the sentiment is not very appreciated, but we have to look at this objectively.

We have allowed for the Chinese government to provide many Americans with backdoor mortgages to purchase land and homes. This, in turn, makes the Chinese government a large owner of real estate in the USA. As soon as these Americans that have taken loans from China start to default, the clearcut owner of all that US real estate is China.

The USA is having a number of internal problems that I think place it in an uncomfortable position to start wars.
I think our economy is in pretty bad shape, we have too much debt as a nation and we're not producing as much. The nation is becoming highly divided (vax versus unvaxxed). The people are quickly losing faith in Biden (Democrats are becoming less secure with their choice of President).
The Covid mess is truly getting out of hand. Now, people are having their livelihoods taken. If you take a trip to NYC, they are making it a tale of two cities. You are either vaxxed and have access to all the "wonderful things" the city has to offer (bars, gyms, lounges, restaurants, theaters, certain stores) or you are not vaxxed and are denied access to entry.
While I can't point out the straw that will break this camel's back, it's becoming more and more obvious that something has to give. It's all just starting to feel like the beginning of some end. I wish I could expand on the specifics, but we've been hit with so much over the last 1-2 years that it's truly hard to list all the minute details that have been chipping away at this unsteady foundation.

But can you see that the clear evidence shows that as a whole, China would survive perfectly well without the USA given that it has 15+ other countries that buy their "dog shit" and adds up to their true export revenues?
Without China, the USA would be in trouble, as it doesn't have many other countries that can produce and sell to the USA as fast as US consumers consume. On the flip side, China has enough dog shit to peddle to a shitload of other countries. Does that make sense?
