i saw this recipe on food network a few weeks ago. rice is supposed to come out much fluffier than if cooked in a pot. i'm going to try it out tonight.
1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher salt
Preheat the oven to 375 degrees F.
Place the rice into an 8-inch square glass baking dish.
Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

Another brown rice recipe:
Cook 1/2 cup brown minute rice
Stir in 1 packet splenda and 1/2 to 1 T. of flax oil

Hey!
I ate that almost every day for the first 7 weeks of my 10 week diet!
I was actually supposed to put the flax oil in my shake but I couldn't stand it in there. I believe YOU, missy, will possibly be eating that MAN RECIPE yourself .......and get ready to eat every last grain....because you WILL ;D
