Title: which oil?

 ve the choice of using any one of theses oils to cook my food..
which one should it be:
1)mustard(rapeseed) oil
2)safflower oil.

i used canola , then when i tried olive my freaken omletts stick and go to shit........ or was it just circumstance or not enuf oil?  ???

I like to use Safflower Oil, you can also get it with added vitamin E (usually).

  If I'm not mistaken, it's because canola has a higher smoke point than olive.  Try using a slightly lower temp with olive and making your omelettes.

 I think the reason the vit e is added is because it ends up getting removed thru the refining process.  There might be a better option.  Do some research on the oil extraction processes...  ???

extra virgin olive oil.

I prefer Greek olive oil made from kalamata olives.

Don't buy the cheap shit you see at the store either, there is a BIG difference in taste despite what you may think ;)

I tend to lean towards olive oil (highest mono).  Again, for health benefits, any 'ol olive oil will do.  If taste is also important, then go ahead and spend more for an extra virgin....

Grapeseed oil is best for high heat, olive oil is not ment to be used for high heat, light sautaing or straight on your food is the best way to use it alot of the healthy parts of olive oil can be lost by high heat cooking.

Follow-up:   The less "processed" the oil the more antioxidants retained.  Therefore, the cold pressed, extra virgin will have the highest nutritional content of olive oils, however, the stronger taste isn't always necessarily desireable.  And, as mentioned, it's not intende for high heat. No single oil is the best choice in all situations.
