To what extent do pros keep a nutritional log?  Are there pros that keep no log at all?  Who?  I want to start cutting but I hate paperwork.

Try fitday.com
Lot's of legwork to customize for yourself, but once it's done, it's a breeze.

agreed.  fitday is the way to go.  just meke sure you have about 30 minutes to set it up.

I customized my own sheet, and pre-loaded in the info on meals I have during the weekdays which are the same every day,
