My area/province is known for this disgusting mix of fries/gravy/cottage cheese refered to as "poutine" I've never tried it, don't like cheese or saugy fries.

As far as drink, I would say beer, don't drink that shit either.

I dont really care for the texture but if prepared right AND eaten within a few minutes out of the grease then they are pretty good. It's like alligator gar...I'll eat that fried as well but not if it's been sitting out for more than 10 minutes.

The hillbillies up here have no good traditional food.............when I moved here people raved about eating cheese curds.

It's the same as a dry cottage cheese...

Not even close.  It's the curd from cheese making - usually chedder.  They're very mild and when they're FRESH, they squeek when you eat them.

those little things wouldn't even whet my palate. I knew a  former powerlifter who made/sold pancakes that were bigger than the clamshell containers that he placed them in, and they were thick! Most people couldn't handle them, due to them being do filling.

They might look like "poffertjes" (mini pancakes) but they aren't. It's a pile of pancakes and each one has a diameter of 11-12", but they are much thinner, about 0.2".
To make them more "solid" I like some oatmeal in my cakes.

When I stayed with my aunt in Maryland, we had to go to the local crab shack. Amazing stuff.

Im in Houston, dont really know much about Dallas.
But yes, here in Houston, there is work everywhere. I like the place. Its hot as shit and humid, but I like it.

It's been awhile since I've made them, but it's basically about 4-6 egg whites, about 1/3C cottage cheese, a scoop of vanilla protein powder (ON), some vanilla 1/2t and some Splenda whipped up in a blender then cooked like pancakes.  Eat as is,  or spread on some peanut butter & roll up and eat on the go or drizzle a little agave syrup or honey on...
