You basically buy a sack of peanuts with shells on, and boil them as needed?

So they're basically "unripened" or not "mature"? Do you eat the shell too? Can you shell them and make peanut butter or does it end up the consistency of hummus? I've noticed a lot of roadside stands in North Carolina & South Carolina selling Boiled Peanuts. Doesn't sound too appetizing :-\
