Which is the best recipe you have found?
I'm getting tired of using true Neopolitan recipe for big green egg. Too much time.
Would rather be able to just keep in fridge for up to one week and then use as needed.
Plus, I plan on making pan pizza in my BGE with same dough.

You'll never get the "best pizza ever" using King Arthur. You need to get your hands on Caputo 00 flour. Most Italian shops will carry it as well as Restaurant Depot.

48 hour cold fermentation will give you a softer dough. More bread like Napoli pizza.
