I believe that scene in They Live was mostly ad-libbed.
Supposedly, Piper and David went off script and went by feel - almost treating it like a wrestling match that has a general direction and pre-determined outcome, but doing everything leading up to that on the fly.
I enjoyed some of the fight scenes in the first two Transporter movies.
I found them entertaining; they seemed like a nice homage to a lot of the cheesy action films I grew up with in the 80's.

I remember reading how Carpenter asked them to make full contact below the neck to make the fight look as realistic as possible.

undisputed - wesley snipes and ving rhames play boxers convicted and now in prison, whole movie leads up to the fight
goon - seann william scott, throughout the whole movie really love the brutal beatdowns, he plays a hockey enforcer and the last fight is the best. based on a true story
honorable mention: once were warriors - the emotional rage beatdown, verycathartic as it was well deserved

There are a lot of candidates. One thing that disqualifies a fight scene from being good for me is people taking blows that would obviously incapacitate or render them unconscious, yet they regain their faculties before the next punch.
