No experience with it, but I'd take as much as I could get my hands on Leaner than beef and I'm sure tastier and better nutritionally. Ted Nugent is a big hunter and he has a wild game cookbook out there. It's called something like "Kill It & Grill It"

We don't have a big elk population here in Tennessee, and it's not legal to hunt the few we have yet. I do deer hunt and can tell you that deer meat is leaner than beef. I'm sure elk meat is better from a nutritional standpoint.

Rattlesnake? okay - had it once novelty Aligator = same. Racoon ~ YUCK never tried it and can't imagine it being any good ~ they eat garbage. what else
