Corned beef is beef brisket that has been soaked in a brine (salt water) for quite some time, so either way, it's very fatty.  Outside of the salt originally being used as a preservative, I wonder if it acts as a tenderizer because you never really hear of anyone eating brisket.  I think it's a pretty tough cut of meat.

Stay away from it unless it's a holiday. Extrodinary amounts of fat in that piece of meat. 24 hr slow cooked Chocolate chilli rubbed brisket served with a bing cherry sauce. Oh la vache it will change your life! Really fatty. Brisket, corned beef, pastrami. All the same cut.
