Thanksgiving Menu

Anyone starting to think about it yet?

I will do my usual brined turkey.  I was thinking:

1st course: Mushroom soup with roasted red bell peppers and rosemary
2nd course: Pear, blue cheese and curly endive salad with spiced roasted pecans and dijon dressing
Main course: Brined turkey, roasted garlic mashed potatoes, green bean almondine, cranberry sauce, gravy
4th course: Fresh fruit, pumpkin donuts with spiced sugar, apple pie, pecan pie, and maybe pumpkin or sweet potato pie

Not sure what else to make or substitute.  Any ideas or suggestions?


I gotta think about Christmas too.  I know I will do a crown roast of pork.  Might do it with fried potatoes with a saffron aoili and grilled/roasted veggies.  Not sure about what soup to make or what salad and other stuff.

come one over stella.  I forgot I usually have several types of bread.  Normally french bread, then several other types.  Right now it seems like oly 7 people will be here.  But if you were down you'd be more than welcome to stop in.

My new favorite simple little hors d'overs ~dates stuffed with goat cheese, topped with crushed candied walnuts / pecans.  Shall I bring a plate?  ;D

I tried brining last year.   ???  I dunno what all the hullabuloo is about ???  Didn't seem to make a hill of beans difference.  Just slather that baby in peanut oil and throw on the grill for 2`1/2 hours.  Perfection  :-*

depends on the brine.  My turkey comes out very juicy and flavorfull.  I then put some peanut oil or veg oil over it, stuff the cavity with aromatics and pop it in the oven.  Let it go and never need to bast it.  I use a probe thermometer and let risidual cook over do the rest.

Big Italian family.one turkey gets cooked at my dad's and another gets cooked at a cousin's.
the best is my grandmother always cooks her delicious Italian wedding soup for an appetizer 8)
homemade from scratch,even the tiny meatballs!

I'm going to bake a batch of Pumpkin Biscotti for the pups and a batch of Cranberry White Chocolate Macadamia nut cookies and maybe a batch of Outrageous Oatmeal Cookies (Starbucks recipe) - unfortunately I couldn't find any white raisins and I went to 3 stores  >:(
