Turkey &/or Chicken Meatloaf
« on: January 19, 2011, 08:40:18 AM »
I know I've posted this before,m but I'm making it today and thought I'd share again.  It's very easy (esp. if you have a food processor)

~2~ lbs chicken &/or turkey breast
¼ Cup bottled chili sauce
8 ounces baby portabella mushrooms
2 egg whites & 1 yolk
½ cup carrots
Onion
Garlic
2 T olive oil
½ Cup oatmeal
¼ Cup yogurt (or milk)
¼ Cup flat leaf/Italian parsley
2 T worcestshire sauce
Fresh ground pepper
Various herbs of choice (optional)

Chili sauce for top

A food processor makes this very easy.

Grind up everything separately in food processor starting with dryer ingredients working towards the chicken.  It makes clean up easier.  So, grind up oatmeal til fine but not powder – just course.  Mix that with the yogurt or milk.  Grind up the parsley til fine. Remove and set aside.  Grind up mushrooms fine, and set aside.  Same with carrots and onions.  Grind up the chicken (raw) or if you don’t have a food processor, just use ground chicken/turkey breast.

Saute the onions in olive oil for about 2 minutes, then add the mushrooms, carrots and garlic and sauté for about 2 more minutes.

Now put everything in a big bowl and mush together with your – get in there and squish until thoroughly mixed.

Put into mini-loaf pan (s), top with more chili sauce and bake at 350 for about 35-45 minutes or til 160-170 degrees.

Chicken is on sale, so that's whatcha git.  Besides, I couldn't find any boneless, skinless turkey breast, only already pre-ground.  I'd rather grind my own  ;)

your're right. I get what I get and don't get upset. I have a heck of a time finding boneless turkey breast and the times I normally go to the store the butcher isnt in yet..

Thank you princessL for sharing so much good recipe for the persons who are working out for bodybuilding. There are all very rich things are in there like turkey, chicken, egg, Yogurt and carrot. All rich in cholesterol and nutrients, and also very much rich in proteins also. This diet will help all bodybuilder and it seems that its taste is also good.
