Tonight I fixed tuna melts for my wife and I. To the top of the line all white meat Albacore tuna, I added minced red onion, minced celery and minced zucchini. For additional flavor I added chopped dill, lemon grass, salt, pepper and a couple of squirts of lemon juice. The binding agent was whole mayonnaise made with olive oil. On the toasted onion buns I put a slice of tomato the tuna and two slices of American cheese before popping them under the boiler.
Later we had peach and lemon sorbet with one cookie.
The food police will have a heyday with this, I am sure. But let me just say that not only was this really a delicious meal, it was a relatively healthy one.
Here's an interesting twist. I was drinking a cup of coffee when I realized it was time to head out to the gym. Rather then throw the coffee out, I added two scoops of protein powder to it and some ice cubes. Not only was I nutritionally ready for a workout, I was wired for it too. Since I use vanilla protein powder, the drink tasted like a latte. I think it is a winner.
You may pick my choice of food for tonight apart, but it tasted great and I believe it was a lot healthier then what most people eat for dinner. Is there hemi-iron in tuna?
