Anybody ever try this?

  Was thinkin of slow cookin some brown rice, chicken,veggies, with some chicken broth in a crockpot, anybody ever done this, or any good suggestions?  (want to make up a batch, and put it in a tupperware for the drive to the classic)

I'm thinking that the brown rice is going to get awefully mushy in a slow cooker.  I've made some healthy jambalaya with brown rice and it's really good, but the leftovers the next day is just plain mush.  It loses all texture after sitting in the liquid that long.

yeah i dont think the brown rice will work out too well.

W.H. - Please share the Jambalaya recipe. I just got back from NO and I'm hooked on the stuff.

what your best bet is to make like a rissoto. Lightly spray pan with olive oil fry vegetables and meat to release flavor, then add rice toss that around with the vegetables and meat then slowly add water then let it reduce to the point it aint watery or claggy. If you do this properly you shoud have a really great meal to have as a traveller and it should not go to mushy the next day.

I don't really follow an exact recipe, I just kind of wing it.  But I'll tell you the main points. 

Meat: Chicken Breasts, Healthy Choice Smoked Sausage, and Shrimp (raw, shelled & deveined).
Rice: Brown Rice is healthier, but white rice tastes better.
Chicken Broth: I use it instead of water.  If you're watching your sodium, then use water.
Can or two of Chopped Tomatoes
Chopped Celery & Onions
Jalepenos: fresh & chopped
Tobasco Sauce.
And pretty much anything else you like can go in it.

Cut the chicken into small pieces and slice the sausage up.  Then cook both in a pan with some Pam spray, until the chicken is done.  Don't cook the shrimp first, throw it in the pot raw, the boiling liquid will cook it.

Depending on how much of everything you have - you want to basically use a bit more liquid (chicken broth) than the amount of rice you use, calls for (because of all the extra stuff).

Throw everything in a large pot and bring to a boil.  Then reduce heat and simmer for about 30 minutes or so.  If it cakes up and looks to chunky, then add more liquid (the rice will soak up most of the liquid).  Season it with Tabasco Sauce & Cayenne Pepper.

That's the gist of it, but use your own intiution when putting it all together.  Mine comes out different every single time and I love it every single time!

Sweet Sli!  Glad to hear it.  I've also thrown in some beans sometimes.  I could pretty much live on that stuff too!

Couldn't you just make the rice seperate and add it before you eat it?
